To be honest, this recipe almost didn’t happen. I almost resorted to chocolate covered lightsaber pretzels. Don’t get me wrong, I love chocolate covered pretzels (a little too much), but I wasn’t particularly jazzed about it. IDK what it is but I have a really bad habit of not planning ahead for this day/ Thankfully I got my act together and quite literally made these yesterday.

These lightsaber churros were inspired by photos of the same item available at Star Wars in Disney. Which was first a reminder that I really need to get my butt there, but second an idea to make a homemade baked version!

The batter comes together quite quickly, consisting of only water, butter, eggs, vanilla, and salt. Then you just pipe them onto cookie sheets, bake, coat with butter, and toss in red or blue cinnamon-sugar coating.

And if you want to really complete the experience, print out some lightsaber handles.

Today is also my 37th birthday, so it’s a good thing I’m also a big Star Wars fan! Sadly that hasn’t translated to making scads of themed recipes but I am working on it. Today’s recipe makes just seven total so far – I told you it was sad. But you know what? Some of the ones I’ve done I am super proud of (esp the baby yoda one) so it’s quality or quantity. Homemade Baked Lightsaber Churros

BAKED LIGHTSABER CHURROS

Nutrition facts: 200 calories 20 grams fat

Ingredients

CHURROS

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 3 Tbsp powdered peanut butter
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 3 Tbsp melted butter (or cooking spray)

CINNAMON SUGAR

  • 1/4 cup each red and blue sanding sugar
  • 1/4 cup granulated sugar
  • 1 Tbsp ground cinnamon

Directions

  1. Preheat oven to 350 degrees. Line two baking sheets with parchment or a silicone baking mat, set aside.
  2. In a medium saucepan add water, butter, and salt. Place over medium-high heat and bring to a boil.
  3. Remove from heat, add the flour and peanut butter powder and using a hand mixer stir to combine (mixture will thicken and resemble mashed potatoes).
  4. Add eggs one at a time, beating on low, mixing well in between. Add the vanilla and mix (will still resemble mashed potatoes – if not add a bit more flour).
  5. Transfer dough into a pastry bag fitted with a large star tip. Pipe 6-inch churros spaced 1 inch apart.
  6. Bake in the oven for 25-30 minutes or until golden brown and crispy.
  7. Meanwhile, add each colored sanding sugar to two separate small bowls. Add 2 Tbsp granulated sugar, and 1/2 Tbsp cinnamon to each and mix. Set aside.
  8. Brush warm churros with melted butter (or spray lightly), immediately place in two separate shallow baking dishes and sprinkle with each colored cinnamon sugar, separately. Toss to make sure they are well-coated.
  9. Best enjoyed warm. If you have leftovers, toast them in a toaster oven to revive them.

Like you, I am not a fan of deep frying so I’ve never made churros. It never occurred to me that I could bake them! Yours came out so lovely and the light saber handles are such fun! Hope you had a fabulous birthday!

I’ve only ever made baked versions because I don’t want to deal with all the oil for frying! But I work with someone from Mexico and he didn’t scoff at them so they must be okay hahaha.
