Basil Pesto Salad Dressing

I already put pesto on everything so why not use it as a salad dressing as well? Just add white balsamic vinegar!

Like bacon, pesto makes everything better. So when trying to eat more fresh salads this summer using vegetables and herbs from our garden and/or farmers’ market it occurred to me that I should pour pesto on my salads as well! With my basil plant growing exponentially I have plenty to go around to make a lot of pesto. To make a salad dressing all I did was add some white balsamic vinegar. You could use a white wine vinegar as well if you cannot find white balsamic.

BASIL PESTO SALAD DRESSING

Makes 3/4 cups

Ingredients:

1/2 cup basil pesto

1/4 cup white balsamic vinegar (or white wine vinegar)

Directions:

  1. Add pesto and vinegar to a small bowl and whisk together (or place in a jar with lid and shake).
  2. Cover and refrigerate until ready to use.
