Turtle Brownie Bites

Enjoy these bite-sized brownies filled withed chopped pecans and topped with sweet caramel and toasted pecan halves.

I don’t know about you, but moving stinks. Sure it’s exciting to move into a new place and get situated but the whole moving boxes and heavy furniture for extended periods of time thing I could do without. So while I slowly work on situating the new living situation, you guys can sit back and enjoy these turtle brownie bites. Whether you use a boxed mix or make the brownies homemade, all you have to add is caramel and pecans for turtley goodness.

One year ago: Spicy Ranch Seasoned Hard Pretzels

Three years ago: Cheddar Baked Potato Soup

Four years ago: Homemade Hot Cocoa Mix

TURTLE BROWNIE BITES

Makes 24 mini brownie bites

Ingredients:

BROWNIES*

3/4 cup sugar

1/4 cup unsalted butter, room temperature

1 Tbsp water

3/4 cups semi-sweet chocolate chips

1 egg

1/2 tsp vanilla extract

1 cup all-purpose flour

1/4 tsp baking soda

1/2 cup chopped pecans

TOPPING

1 cup caramel ice cream topping

24 pecan halves, toasted

Directions:

  1. Preheat oven to 350 degrees. Grease 24 mini-muffin cups.
  2. In a large microwave-safe bowl, combine sugar, butter, and water. Microwave on high for 1 minute or until butter is melted. Stir in the chocolate chips until melted.
  3. Stir in egg and vanilla extract. Add flour and baking soda, stirring until blended.
  4. Allow to cool to room temperature. Then, stir in chopped pecans.
  5. Spoon tablespoons of batter into muffin cups.
  6. Bake for 8-10 minutes or until top is set and a toothpick inserted into the center comes out slightly wet. Place pan on wire rack to cool. (If the brownies do not sink slightly, press with your thumb or the back of a spoon.)
  7. Once brownies are cooled, remove from pan. Top each with about 2 teaspoons of caramel and top pecan halves.

* Want to make it easier? Use a boxed brownie mix and ingredients on box.

Yes, moving stinks. I am so happy to be in our home. It will be hard to every get me to want to leave again just because of the move. Good luck!!

MOVING IS THE WORST. blech. Fingers crossed you get all settled in quickly and that everything goes smoothly!

and also–omg yum. turtle brownies is like “duh! yum!” and the fact that they’re little bites means I can eat 12 :D
