Chicken Pot Pie Wellington – Dinner@6 American Express Gift Card Giveaway

For this contest, I came up with a variation of chicken pot pie by making it into a wellington-type meal. Not only does it have just six ingredients (not counting salt, pepper, oil and water), but it’s quick and easy to make, yet looks like you spent a lot of time preparing it. The golden flaky crust is wrapped around a juicy chicken breast which has been surrounded by onion and chive cream cheese, vegetables, and cheddar cheese. In other words, delicious.

CHICKEN POT PIE WELLINGTON

Serves 4

Ingredients:

4 boneless, skinless chicken breasts

Salt and pepper

1 Tbsp olive oil

1 sheet puff pastry, thawed

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables, thawed

4 Tbsp onion and chive reduced fat cream cheese

1 egg whisked with 1 Tbsp water

Directions:

  1. Preheat oven to 400 degrees. Line a baking sheet with foil and lightly coat with non stick cooking spray, set aside.
  2. Salt and pepper both sides of the chicken breasts. In a large skillet, heat oil over medium. Add chicken and cook 8 minutes per side, or until browned. Transfer to a plate to cool.
  3. Roll out the puff pastry on a floured work surface into a 14-inch square. Cut into four 7-inch squares.
  4. Place 1/4 cup cheddar in the middle of each square, followed by a 1/4 cup vegetables. Place a chicken breast over the cheese and vegetables, and spread a tablespoon of cream cheese over each.
  5. Lightly brush the edges of the pastry with water. Fold the pastry up and over the chicken and press to seal. Place wrapped chicken, seam-side down, on the prepared baking sheet. Brush with egg mixture and bake for 20 minutes or until golden brown.

My favorite is potato skins–potatoes, cheddar, bacon, chives, and sour cream or ranch! Bake the potatoes normally, then cut them in half, scoop some potato out to make room for the stuff you’ll add, cut them in half again, and top with cheddar and bacon that you’ve already cooked and crumbled. Bake again for about 15 minutes, then top with chives and garnish with sour cream!

Chicken Francaise- (Chicken cutlets, fresh lemons, butter, parsley, egg, flour). Dresge cutlets in flour then beaten egg. Pan fry in olive oil until golden brown on both sides. Finish cooking cutlets on 350 degree oven for 30 min. Meanwhile soften butter, add fresh squeezed lemon juice and chopped parsley. Spread butter mixture over cutlets. Place in oven to melt butter mixture. Serve over brown rice. Enjoy!

cute idea!

My fav 6 ingredient recipe is a quick pasta dish…

1 lb rigatoni
1 large onion, chopped
a couple of cloves of garlic, minced
1 lb fresh tomatoes, chopped
handful of basil, roughly chopped
1 lb fresh mozzarella
2 tbsp olive oil
salt & pepper

Cook pasta according to package instructions. While the pasta is cooking, saute the onion and garlic in olive oil over medium heat, then add the chopped tomatoes. Season with salt and pepper, to taste. Cut the mozzarella into bite sized pieces, drain the pasta (when it is al dente) and toss everything together. Top with the chopped basil and you are good to go!

What a fun and creative recipe! Awesome pictures too! The recipe is simple enough that I may have my boyfriend take a crack at it! he is learning ;) Thank you!!

My go-to 6 ingredient recipe is!:
– 1 box corn/gluten free shells
– 1 cup cubed extra firm tofu
– 2 huge handfulls of fresh baby spinach
– A couple tablespoons of extra virgin olive oil
– About 1/4-1/2 cup graded Pecorino Romano
– salt and pepper to taste
Cook the pasta according to directions, lightly saute the cubed tofu with olive oil, toss the spinach in with the warm pasta once it has been drained, stir the spinach in with the pasta and add the rest of the olive oil, stir, toss in the tofu with the pasta, stir, toss the cheese in, stir, salt and pepper to taste… Enjoy!

Wow, your creation is mouth watering. You make the wellington so simple and beautiful as well. Can’t wait to try it. My family’s favorite 6 ingredients dinner is Creamy Asian Beef Noodle.

8 ounces soba (Japanese buckwheat noodles)
1 1/2 pounds of skirt steak, cut in half or thirds to fit in skillet
1 pound(s) of snow peas, stem ends removed
2 tsp. of soy sauce
8 ounce(s) of 8 ounce Philadelphia Cream Cheese, softened
2 Green Onion, chopped

In a pot of boiling salted water, cook noodles until al dente. Drain and set aside.

Heat a large skillet over medium-high. Season steak with salt and pepper. Cook, turning once, until medium-rare, 3 to 5 minutes per side. Transfer steak to a cutting board and loosely cover with aluminum foil (reserve skillet with juices).

Add snow peas to skillet and toss with juices. Cook on medium-high heat, tossing occasionally until crisp-tender, 2 to 3 minutes. Add noodles, soy sauce, and cream cheese, cook until warmed through, about 1 minute. Transfer to serving bowls. Slice steak and place on top of noodles. Sprinkle with green onions and enjoy.

I make a mexi casserole.. Ground turkey, enchilada sauce, blk beans, taco seasoning, shredded cheese and tortilla chips. Easy!

Our current favorite 6 ingredient recipe is for chicken tacos and I have it in the crock pot right now.

2 lb chicken breasts, jar of salsa, 2 T. chili powder, 1 t. cumin, 1 t. cayenne, 2 limes (squeeze the juice on then throw in the limes but remove the lime halves before eating), throw 1/2 bunch of cilantro on top and cook on low for 8 hours.

My favorite six ingredient recipe is a stuffed green pepper: green pepper, ground beef, tomato sauce, rice, mozzarella cheese and onion. Cook ground beef with onion drain grease, cook rice as directed, clean pepper outside and scoop out inside, add tomato sauce and cooked rice to beef and then stuff in pepper and top with cheese and bake

WOW, what a great giveaway! I would have to say that a quick breakfast chilaquiles is my fav. Saute 10 corn tortillas, cut in triangles, in olive oil and fry until cooked. Add green salsa, black beans and cook for 10 minutes, Top with chopped red onions and cheese. Devour!

This is fun! My favorite 6-ingredient recipe is Baked Eggs with Tomato and Spinach: 8 eggs (separated), half an onion, bunch of spinach, can of diced tomatoes, Parmesan Cheese, Mozzarella Cheese.

Mix eggs whites with cheeses. Saute onions, add spinach and tomatoes. Add to egg mixture and pour into small baking pan. Top with egg yolks and bake at 400 degrees for 25 minutes until puffed and golden. Delicious with crusty french bread!

Here’s mine Pork chops stuffed with bacon and gouda
Ingredients

2 ounces smoked Gouda cheese, shredded
4 slices bacon, cooked and crumbled
1/4 cup chopped fresh parsley
1/8 teaspoon ground black pepper
2 (2 1/4 inch thick) center-cut, bone-in pork chops
1 teaspoon olive oil

Directions

Preheat an outdoor grill for medium heat.
In a small bowl, combine the cheese, bacon, parsley, and 1/8 teaspoon black pepper.
Lay the chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. Stuff cheese mixture into pocket, and close with a wooden toothpick. Brush meat with oil, and season with salt and more black pepper.
Lightly oil the grill grate. Grill over medium heat for 5 to 8 minutes on each side, or until pork is done. Careful not to overcook!

Wow, this recipe looks amazing! My favorite easy 6 ingredient or less recipe is just for pizza dough.
Flour, Yeast, (Lukewarm Water, Salt), Garlic, (Olive Oil), Mozz. Cheese, Sliced Tomatoes and Broccoli (or Spinach). The variations are really endless. :)

Potato Soup with Bacon

(very thick and creamy, and I leave lots of potato chunks in it)

5 slices bacon
5 russet potatoes
2 cans chicken broth
about a cup of half and half
garlic and onion to taste

I bake my potatoes first, sometimes the day before. Peel when cool.

Chop bacon into small pieces and brown in pot. Remove from drippings and set aside. Simmer garlic (I use 3-4 pods, minced) and one chopped onion in bacon drippings until transparent, about 5 minutes. Next, add two cans of chicken broth and the potatoes that have been chopped into small pieces. I also add a bit of water to get he right proportion of liquid to potato. I let this cook for 45 minutes or so until the potatoes have started softening and dissolving. At this time I use a masher to mash until I get the consistency I want.

I stir in half and half about five minutes before I serve, and I also add the crumbled bacon at this time.

Your recipe looks great! It’s lot a portable pot pie! You know, it’s amazing what you could come up with in just 6 ingredients.

I guess my favorite 6 ingredient recipe would have to be the one that I used for the contest :)

Six Ingredient Pizza Bake

Ingredients:
1 tablespoon olive oil
1 can refrigerated biscuits, 8 count
2 cups pizza sauce
1 cup shredded mozzarella
1/2 cup ricotta
1/2 cup julienned sun-dried tomatoes in oil, drained
10 fresh basil leaves, chiffonade

Directions:
Preheat oven to 350 degrees F. Lightly oil a 9-inch cast iron skillet with olive oil; set aside.
Unroll biscuits from can and place into bottom of skillet.
Using a ladle, top biscuits with pizza sauce.
Top with mozzarella in an even layer, working to edges.
Drop spoonfuls of ricotta over mozzarella.
Top evenly with sun-dried tomatoes.
Place into oven and bake for 20 to 25 minutes, until cheese is melted and biscuits are cooked through.
Serve immediately, garnished with basil.

Oooh this looks so yummy! I’m always looking for ways to cook with chicken, so this is ideal. Here is my recipe below.
One of my favorite recipes, my mom taught me how to make this, it’s so yummy with a side of mashed potatoes.

Chicken Monterrey

1 tsp extra virgin olive oil (or butter)
4 chicken breasts
2 cups of shredded Monterrey jack cheese
1/2 c onions (sliced)
1 c mushrooms (canned or fresh)
1 clove of garlic (minced)
1 pinch of Morton’s seasoning salt

Heat oil in pan, add garlic and onions and cook til translucent, add chicken breasts and grill over medium heat until nearly browned on both sizes, sprinkle with seasoning salt and add mushrooms to pan. Turn heat to low, sprinkle each chicken breast with some shredded cheese, and then cover with skillet lid. Allow cheese to melt then serve immediately.

Honey-Soy Pork Chops
1/4 cup lemon juice
1/4 cup honey
2 tablespoons reduced-sodium soy sauce
1 tablespoon sherry or unsweetened apple juice
2 garlic cloves, minced
4 boneless pork loin chops
combine the first five ingredients. Pour 1/2 cup into a large resealable plastic bag; add pork chops.
Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.
over heat for 4-5 minutes on each side or until a meat thermometer reads 160°, basting frequently with remaining marinade.

My favorite 6 ingredient meal? Caprese Panini with Sweet Potato Fries. All you need:
-Ciabatta Bread
-Tomatoes
-Mozzarella
-Pesto Sauce
-Fresh Basil Leaves
-Sweet Potatoes, sliced and cut into wedges, then deep fried until crisp

Layer all ingredients and make panini, toast and enjoy with fries!

Carrot cake is my absolute favorite dessert and this microwave recipe is so easy:

Mix together:
1/2 cup oil
1 cup brown sugar
2 eggs
cinnamon
1 1/2 cups whole wheat flour
1 packet baking soda
1 cup of raw carrots

Put the mixture into a microwave-safe pyrex, preferably round, and in about 7 minutes it’s ready!

Well, you bake the chicken before you wrap it in the pastry. So as long as you don’t overcook it from the start then yes I suppose the puff pastry prevents further drying out of the chicken.

One of my favorite side dishes can have six ingredients….or as many as you want! I love making Apple Broccoli Salad. Combine broccolie florets, mayo, diced apples, raisins, crumbled bacon, and cashews to top it off. It’s a delicious refreshing side dish :-)

{Grilled Vegetable Stack} over Pesto Linguini
Ingredients
2 zucchini, quartered down the long side
1 onion, sliced and not separated
2 portabella mushrooms
salt and pepper, to taste
2 servings of whole wheat linguini
2 servings pesto, to taste
1 tomato, sliced
How-To
1. Preheat the grill to medium heat and get a pot of water boiling for the pasta.
2. Prepare the vegetables by slicing them accordingly, spraying with olive oil and sprinkle both sides of the vegetable slices with salt and pepper.
3. Cook the linguini according to the packaged instructions.
4. Meanwhile, grill the vegetables.
5. After the pasta has reached al denté, drain and stir in the pesto.
6. Plate up the pesto linguini and stack the vegetables on top.
7. Serve warm with some sprinkled cheese.

Dijon chicken!

Chicken, dijon mustard, oregano. Little seasoning. Boom. Done. Serve it up with some rice n veggies.

Tex-Mex Chicken

1 lb chicken breast cleaned
1 cup Italian dressing
1 can diced tomatoes with green chilies
1 can Italian stewed tomatoes
# Jalapenos diced (# by spice taste 1 for normal 2-3 for hot)
Palm of cilantro (yes I cook like my grandmother using palm good hand full etc.)

Marinade chicken in italian dressing for at least an hour before cooking. Best to do in the glass dish you are going to bake the meal in.
Combine the two cans of tomatoes, jalapenos and cilantro in a medium pot and bring to a boil. Lower to simmer and mix thoroughly for about 5-10 min.
Pour tomato mix over chicken and bake at 425 for 45 min or until chicken is cooked through.

Serve over rice or pasta. Makes 2 adult portions.

Did this over angel hair one night with a nice bottle of Merlot and a good book.

My favorite 6 ingedient meal is, hands down, my tuna casserole! Tuna, noodles, cream of celery soup, minced onions, peas, and french fried onions. (seasoned salt too)
Boil noodles, adding peas for last 2 min, drain. Drain 2 cans of tuna. Add noodles and peas with tuna, 2 cans of soup and 1/4 cup minced onions, 1.5 tsp seasoned salt. Mix together, pour into a 2 qt baking dish. Bake at 350 for 30 min. Top with 1 cup french fried onions and bake another 10 min. Yum!
