Buttermilk Pancakes

After completing the P90X Yoga X DVD, it seemed as though I was quite deserving of a stack of fluffy pancakes. What other reason do we work out than to be able to enjoy all the good food in life? And if I needed any more reason, I needed to use the buttermilk leftover in my refrigerator in preparation for holiday vacation? Done deal. Throw some bacon on my plate while we’re at it.


1 cup flour

1/4 tsp salt

1 tsp baking soda

1 egg

2 Tbsp melted butter

1 tsp vanilla extract

1 Tbsp sugar

1 cup buttermilk


  1. Mix flour, salt and baking soda.
  2. Add egg, butter, vanilla, sugar and buttermilk. Stir until just combined.
  3. Drop by 1/4 cup onto a hot greased griddle spreading slightly with back of spoon.
