It’s time for the Buckeyes to take on last year’s National Champions, the Indiana Hoosiers, unfortunately on their home turf. We did not play them in the 2025 season but in 2024 I marked the occasion with a Buckeye version of their Hoosier cream pie which is the official state dessert of Indiana. Since I covered that state dessert takeover already, I decided to just make something fun that still features peanut butter and chocolate.

We are actually visiting a friend for her birthday this weekend so naturally I decided to make something for her birthday celebrations. When we both still lived in Memphis I used to come up with all kinds of fun combinations of some of her favorite things for her birthday, such as Reese’s Oreo Chocolate Cake with Funfetti Cookie Dough Filling and Birthday Explosion Mini Cheesecakes, so I clearly needed to keep up the trend of combining flavors which I love to do anyway.

This year for her 42nd birthday I decided to keep the combination to just three things: cheesecake, s’mores, and peanut butter cups. So welcome to the recipe blog post for peanut butter s’mores cheesecake bars adapted from my speculoos s’mores cheesecake bars! How it took me this many years to make a peanut butter cup version is beyond me but better late than never.

The graham cracker crust is topped with a layer of peanut butter before the peanut butter cup cheesecake filling is poured in, and then there’s a layer of even more peanut butter cups, graham cracker pieces, and toasted marshmallows on top.

Originally I was going to surprise her with these treats but she kept talking about all the other things she wanted to bake for this weekend that I had to spoil the surprise before we were overrun with sweets. Not that I am opposed to an abundance of sweets, I just wanted her to have the full picture.

Either way, I am excited to celebrate my friend this weekend in Nashville – Happy birthday Maggie!

Yield: 32 bars Prep Time: Cooking Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

CRUST

  • 2 cups graham crackers crumbs (I used the cinnamon kind)
  • 1/3 cup butter, melted
  • 3 Tbsp sugar
  • 1/2 cup creamy peanut butter, warmed in the microwave for 30 seconds

FILLING

  • 4 (8 oz.) blocks of cream cheese, softened
  • 1 cup sugar
  • 1 Tbsp vanilla extract
  • 3 Tbsp all-purpose flour
  • 4 eggs, room temperature
  • 1/2 cup chopped peanut butter cups

TOPPING

  • 1/2 cup chopped peanut butter cups
  • 1 cup mini marshmallows
  • 4 graham crackers, coarsely chopped

Directions

  1. Preheat oven to 350 degrees. Line a 13×9-inch pan with foil or parchment paper, with ends of foil extending over sides.
  2. In a medium bowl, mix the graham cracker crumbs, butter, and sugar together until all the crumbs are moistened; press onto bottom of prepared pan. Drizzle the peanut butter butter evenly over the crust.
  3. In the bowl of a mixer fitted with a paddle attachment or a large bowl with a hand mixer, beat together cream cheese, 1 cup sugar, and vanilla until smooth. Sift in flour; mix well. Add eggs, one at a time, mixing on low speed after each just until blended. Stir chopped peanut butter cups into cream cheese mixture with a rubber spatula. Pour over crust.
  4. Bake 30 minutes; remove from oven and sprinkle with chopped chopped peanut butter cups, mini marshmallows, and chopped graham crackers. The top of the cheesecake will be almost set – don’t be afraid to press the toppings down into it slightly. Bake for another 10 minutes or until center is almost set. Cool completely. Refrigerate at least 4 hours. Use foil handles to lift cheesecake from pan before cutting into bars.
