Healthy Blueberry Cheesecake Ice Cream

Did you know you can make healthier ice cream with a frozen banana? Add cream cheese, blueberries, and graham crackers for a blueberry cheesecake version!

Not only is July #NationalIceCreamMonth AND #NationalBlueberryMonth, but today (July 21, 2013) is National Ice Cream Day! To celebrate in combination with Single Serving Sunday, I made you a single serving blueberry cheesecake ice cream with only 4 ingredients and no ice cream maker!

By freezing and blending up a frozen banana, you will get a creamy smooth ice cream base to then swirl in the cream cheese, blueberries and graham crackers. Want to make it for more than one? Just multiply the recipe by how many servings you need.

Healthy Blueberry Cheesecake Ice Cream - made with frozen bananas

HEALTHY BLUEBERRY CHEESECAKE ICE CREAM

Yield: 1 serving Prep Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 1 banana*, sliced and frozen
  • 1 oz. cream cheese
  • 1/4 cup blueberries (fresh or frozen)
  • 2 graham cracker squares, chopped

Directions

  1. In a highpowered blender or food processor, process the banana, scraping down the sides of the blender every so often, until smooth and creamy.
  2. Add the cream cheese and process until blended.
  3. Add the blueberries and graham crackers. Pulse until just combined.
  4. Serve immediately for soft serve or freeze for a few hours until scoopable.

Notes

*Preferably not too ripe or it'll be a stronger banana flavor

Erin, your ice cream looks amazing! It looks just as good as full fat, creamy, traditional ice cream so I’m blown away that this is based on banana. I can’t wait to try this!

This sounds very nice, like something I might make. However, since I am watching both calories and carbs, I would probably leave out the graham crackers (or use a small banana and one cracker). I really like the idea of single serving ice cream with no added sugar. :-)

I vowed to make ice cream once a week and am way behind. No better day to start again than today. I had a similar kind of frozen yogurt at Ben and Jerry’s. It was so good but making it at home would be even better.
