Mini Peanut Butter Snickers Cheesecakes 2

When it comes to mini desserts, mini cheesecakes are my favorite. Combining these cute cite-sized treats with peanut butter and chocolate seemed like a fantastic way to celebrate Chocolate Peanut Butter Day. Peanut Butter & Co.’s Dark Chocolate Dreams peanut butter was used in these cheesecakes to ensure complete peanut butter and chocolate saturation, but were also stuffed with caramel-peanut butter candy bars and topped with more candy, peanuts, and caramel sauce. You might want to take a moment to admire their beauty, but only a moment because they deserve to be devoured.

MINI CHOCOLATE CARAMEL PEANUT BUTTER CHEESECAKES

Makes 12 mini cheesecakes

Ingredients:

CRUST

2 oz. graham crackers

1 oz. peanuts

2 Tbsp unsalted butter, melted

CHEESECAKE

8 oz. cream cheese, room temperature

1/2 cup sugar

1 egg

1 tsp vanilla extract

1/2 cup Dark Chocolate Dreams peanut butter

3 fun size chocolate caramel peanut butter candy bars, quartered

TOPPING

3 fun size chocolate caramel peanut butter candy bars, quartered

Roasted peanuts

Caramel sauce

Directions:

  1. Preheat oven to 350 degrees.  Lightly coat a 12 mini cheesecake cup pan with nonstick cooking spray, set aside.
  2. Add graham crackers and peanuts to a food processor and pulse until finely ground.  Combine crust mixture and melted butter in a small bowl and mix until well combined.  Spoon into prepared cheesecake pan.  Press into the bottom of each cup so the crust is flat (I used a tall shot glass).  Partially bake for 5 minutes or until slightly golden, remove from oven.
  3. In a medium bowl, with an electric mixer beat the cream cheese and sugar until smooth.  Beat in egg and vanilla until combined, scraping down the sides as needed.  Stir in the peanut butter until incorporated.
  4. Place one quarter of a candy bar into each cup. Pour the cheesecake mixture over the candy and distribute evenly between the 12 cups.  Bake for 25-28 minutes or until cheesecake is cooked through.  Let cool completely, remove cheesecakes from pan, and refrigerate.
  5. When ready to serve, top with one quarter of a candy bar, peanuts, and caramel sauce.
