These cookies were the epic conclusion to the feast last Saturday. The day couldn’t end on just any old cookie after that meal. So why not stuff some bacon in there?
But how on earth does candied bacon get into a peanut butter cookie? Easy! As long as you can prevent yourself from eating the cinnamon sugared bacon before it makes its way into the cookie dough (good thing I made extra). Still not convinced? Let me walk you through this. First start with this…
Dunk it into some chocolate, toss it in the cookie dough, and wait impatiently for the cookies to bake. Voila, you end up with these! Better with bacon? I say yes. Go ahead, I dare you to make them ;-).
CHEWY PEANUT BUTTER COOKIES WITH CHOCOLATE CANDIED BACON
Makes approximately 12-15 cookies
Ingredients:
1/2 cup butter, softened
1/2 cup peanut butter
2/3 cup brown sugar
1/4 cup white sugar
1 egg
1 tsp vanilla extract
1-1/3 cup all-purpose flour
1/4 tsp salt
1 tsp baking soda
6 slices cinnamon-sugared candied bacon
1/2 cup chocolate chips, melted
Directions:
- Preheat oven to 350 degrees. Dip candied bacon slices in melted chocolate and let come to room temperature while preparing the dough. If needed, stick them in the fridge for a few minutes.
- Cream butter, peanut butter and sugars together in the bowl of an electric mixer until fluffy – about 3-4 minutes. Add egg and vanilla, mixing until combined. Add flour, baking soda and salt, mixing until just combined and dough forms. Crumble bacon and fold it into dough. Drop tablespoon-sized dough balls on a baking sheet and bake for 10-12 minutes.

Fun idea. The sugared bacon looks so good I’m not sure any would make it in to your cookies.
My husband would do a happy dance if I made these for him :) Candied bacon is ridiculously good!
Still have to try some of that candied bacon and don’t know if it’d even make it into the cookie dough.
