The saying “April showers bring May flowers” really does have some truth to it. Except that many of the flowers here in Ohio were already blooming in late March due to unseasonably warm temperatures and when the rain started coming down almost daily in April the temperatures dropped to the point where it felt like the coming of fall, not spring. Heck we’ve even had snow! Ugh, remind me why I left the south again? I know I grew up in upstate NY but I’ve lost my cold weather tolerance after living in the warmth for 8 years. But I digress…

This week’s meal plan has you covered regardless of the weather you are currently experiencing with a diverse array of meals such as cod Caesar salad, homemade pizza, and even my kofta platter (which may look intimidating but I promise it’s easy to throw together). Who’s thinking what I’m thinking and wants to serve the fried okra with the garlic parmesan pasta? Mmmmm yea. Then for dessert treat yourself with a coconut chocolate chip buttermilk crumb cake.
