Happy Summersgiving and National Turkey Lovers Month! To celebrate I grilled up some turkey burgers and turkey kabobs using tricks I learned from Ohio Poultry two years ago:

1. Use a 93/7 blend of ground turkey.
2. Add baking soda (1/4 tsp + 1 tsp water/lb), unflavored gelatin (1/2 tsp/lb), and/or butter (1 Tbsp/lb) to help retain moisture.
3. Never overwork any type of ground meat.
4. Use nonstick spray to prevent sticking to the grill.

Also, as a research scientist who studies Salmonella, I strongly agree with their four core practices when cooking poultry:

1. Wash your hands and contaminated surfaces often, especially those tongs you used to put raw meat on the grill.
2. Don`t cross contaminate your food. Use separate cutting boards for raw meat and vegetables.
3. Cook to an internal temperature of at least 165°F.
4. Refrigerate any leftovers promptly. Unless you have proper chilling/heating apparatuses to maintain temperatures of at least 140°F or chilled to 40°F or lower.
