My favorite summer dessert is ice cream cookie sandwiches. If it’s too hot to bake homemade cookies, I buy Archway or bakery cookies and scoop softened ice cream between 2 of them. I roll the sandwiches in sprinkles, jimmies, chopped nuts, or whatever is on hand. Pop them into the freezer until the ice cream firms up. Easy-Peasy!

It is super simple. A couple of containers of key lime yogurt, a container of whipped cream, a pre-made gram cracker crust or you could make it your self. Mix the yogurt and the whipped cream together, put into the crust and throw in the freezer!
It is so good on a hot day!

One of my favorite summer desserts is Ambrosia. It has all of my favorites in one. Fruit, whip cream, coconut, nuts, marshmellows and cinnamon.
