Review: Birds Eye Lightly Sauced Primavera Vegetable Risotto

How many of you always cook every meal completely from scratch? I know I sure don’t even though I wish I had the time. Some days I can’t even attempt to cook dinner for myself that would require more than 5 minutes or preparation. Thanks to some Birds Eye frozen vegetables, dinner was saved on such a day. I had some lightly seasoned shredded chicken stashed away already and thought that would be the perfect addition to the risotto.

The risotto steams in the bag in just a few minutes, producing a deliciously saucy vegetable and rice blend. I simply spooned it out of the bag and spread over a serving of shredded chicken. The only thing I would change is adding a bit of seasoning. Not bland, but it needed a little something. The risotto would be a great add-in to many recipes as well for days when more time is permitted. I am dreaming of casseroles.

There was also enough left over for lunch the next day! And you all know how much I love leftovers for lunch :-).

Glad you liked this one. I liked it and it was a great alternative to homemade risotto!

I liked this one too! Wish I could cook from scratch every night, but that is just not possible!

Seriously, I almost ate my arm waiting for dinner to cook tonight. That’s what I get for going to a 6-7pm spin class and eating dinner late.
