Review: Soups

Today is National Homemade Soup Day. And what better way to celebrate than with a cookbook full of soup recipes! The title, Soups: More Than 50 Fresh and Easy Soup Recipes, describes the cookbook quite well as most of the soups are ready in 30 minutes. From hearty soups like Pie-Crust Mushroom Soup and Greek-style Lamb Meatball Soup to lighter delights like Pumpkin Soup with Harissa and Curried Zucchini Soup. The recipes also provide dual measurements and serving suggestions, although I found the servings indicated for each recipe I tried to be a bit skewed, serving more than indicated. I either eat very small portions of soup or the recipes have larger serving sizes. Good thing soup is easy to freeze! There is also a basics section full of accompaniments to dress up basic soups with spice and seed sprinkles and croutons or make meals fun with grilled cheese.

First I tried the Mexican Cream of Corn soup and it was pretty good. I enjoyed the spices used for flavor and especially enjoyed dipping the corn chips into it. Although I have to admit, I could’ve used a nice Mexican-style grilled cheese to dip into it. Or maybe a side of cheesy nachos!

Next I tried a soup that required a bit more time to prepare (1.5 hours including cook time), Goulash with Herb Dumplings. The dumplings were my absolutely favorite part of this soup. They were so buttery and fluffy, and I think all soups should be accompanied by these dumplings. Heavenly goodness right there.

This cookbook will be great for whipping up easy weeknight soups to get through the rest of these cold months. Although it is going to be in the 50s all week here, but let’s disregard that and snuggle up on the couch ;-).

Mmmmmm so many fabulous soups! It’s freezing here right now, so I could really go for any of them.

I love your blog and all the recipes sound delish. My homemade soups for today are Manhattan clam chowder and oyster stew which are two of my favorites. My hardest decision is which to eat first. Thank you again for the great blog and great recipes.

National soup day is a thing? Who knew, guess every food has its day! I love soup and haven’t made enough this year. That goulash looks gooooood. :)
