Actually, I am quite surprised I managed to pull together a recipe to post today. My time management skills must be ridiculously awesome this week despite the mayhem. So today while I am off enjoying Shiva&#8217;s post-wedding brunch, followed by a long haul back to Memphis, enjoy this taco stack!</p>

<p style="text-align: center;"><em><strong><a href="#RECIPE">Jump to recipe</a></strong></em></p>

<p class="wp-block-paragraph">Hooray it&#8217;s Secret Recipe Club reveal day! This month I had the pleasure of discovering Lindsay&#8217;s <a href="http://www.lifeandkitchen.com/" target="_blank" rel="noopener noreferrer">Life and Kitchen</a>. As usual I had a hard time picking just one recipe to showcase for today, but there&#8217;s always time to make more later, right??</p>

<p class="wp-block-paragraph">Remember when the recipe for the <a href="https://www.thespiffycookie.com/2011/03/15/creamy-baked-chicken-taquitos/" title="Creamy Baked Chicken Taquitos">creamy baked chicken taquitos</a> was wide-spread across the food blogosphere? Well, Lindsay made her own version with bean and cheese filling and it&#8217;s just as yummy! Rolled up in a corn tortilla, baked until crispy, and served with your favorite salsa. </p>

<div class="wp-block-image">
<figure class="aligncenter size-large is-resized"><img loading="lazy" decoding="async" width="683" height="1024" data-attachment-id="35455" data-permalink="https://www.thespiffycookie.com/2011/11/28/bean-and-cheese-taquitos/bean-and-cheese-taquitos-2/" data-orig-file="https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2.jpg" data-orig-size="1200,1800" data-comments-opened="1" data-image-meta="{&quot;aperture&quot;:&quot;7.1&quot;,&quot;camera&quot;:&quot;Canon EOS Rebel T6i&quot;,&quot;created_timestamp&quot;:&quot;1720767621&quot;,&quot;focal_length&quot;:&quot;47&quot;,&quot;iso&quot;:&quot;3200&quot;,&quot;shutter_speed&quot;:&quot;0.00625&quot;}" data-image-title="Bean-and-Cheese-Taquitos-2" data-image-description="" data-image-caption="" data-large-file="https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2-683x1024.jpg" src="https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2-683x1024.jpg" alt="Gluten-Free and Vegetarian Bean and Cheese Taquitos with Salsa." class="wp-image-35455" style="object-fit:cover;width:400px;height:597px" srcset="https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2-683x1024.jpg 683w, https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2-200x300.jpg 200w, https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2-768x1152.jpg 768w, https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2-1024x1536.jpg 1024w, https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2-1170x1755.jpg 1170w, https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2-585x878.jpg 585w, https://www.thespiffycookie.com/wp-content/uploads/2011/11/Bean-and-Cheese-Taquitos-2.jpg 1200w" sizes="(max-width: 683px) 100vw, 683px" /></figure>
</div>

<p class="wp-block-paragraph">If you don&#8217;t just want to eat a plate of these for dinner, bean and cheese taquitos would also make for a great appetizer! I can confirm this from experience as I made these for a party I hosted and they were quick to be devoured. </p>

<p class="wp-block-paragraph">Definitely going to stock-pile these in my freezer along with the chicken ones &#8211; so easy to make and freeze well for even easier meals later on.</p>

<span id="more-763"></span>

<p style="text-align: center;"><em><strong><a href="#RECIPE">Jump to recipe</a></strong></em></p>

<p class="wp-block-paragraph">Taco Bell, how I love you. No matter what is actually in your products I cannot deny the deliciousness. Being the only fast food restaurant I frequent, you could say it&#8217;s a guilty pleasure. And I am fully aware that it is not actually Mexican food. Sometimes you want Mexican and other times you want Taco Bell. </p>

<p class="wp-block-paragraph">This particular day I wanted Taco Bell, but didn&#8217;t feel like leaving the house. Talk about lazy fat-kid syndrome. So I decided to re-create one of my favorite burritos and made it tiny bit healthier. At least as healthy as meat and cheese can be when using low-fat ingredients. And you know what? It was filling and comparably wonderful to the real thing.</p>

<div class="wp-block-image">
<figure class="aligncenter size-full"><img loading="lazy" decoding="async" width="600" height="400" data-attachment-id="37431" data-permalink="https://www.thespiffycookie.com/2011/02/02/homemade-taco-bell-beefy-5-layer-burrito/homemade-beefy-5-layer-burrito-2/" data-orig-file="https://www.thespiffycookie.com/wp-content/uploads/2011/02/Homemade-Beefy-5-Layer-Burrito-2.png" data-orig-size="600,400" data-comments-opened="1" data-image-title="Homemade-Beefy-5-Layer-Burrito-2" data-image-description="" data-image-caption="" data-large-file="https://www.thespiffycookie.com/wp-content/uploads/2011/02/Homemade-Beefy-5-Layer-Burrito-2.png" src="https://www.thespiffycookie.com/wp-content/uploads/2011/02/Homemade-Beefy-5-Layer-Burrito-2.png" alt="Homemade Beef and Bean 5-Layer Burritos." class="wp-image-37431" srcset="https://www.thespiffycookie.com/wp-content/uploads/2011/02/Homemade-Beefy-5-Layer-Burrito-2.png 600w, https://www.thespiffycookie.com/wp-content/uploads/2011/02/Homemade-Beefy-5-Layer-Burrito-2-300x200.png 300w, https://www.thespiffycookie.com/wp-content/uploads/2011/02/Homemade-Beefy-5-Layer-Burrito-2-585x390.png 585w, https://www.thespiffycookie.com/wp-content/uploads/2011/02/Homemade-Beefy-5-Layer-Burrito-2-263x175.png 263w" sizes="(max-width: 600px) 100vw, 600px" /></figure>
</div>

<p class="wp-block-paragraph">Fast forward 15 years and my love for Taco Bell is still just as strong. However, I was scorned on my last visit with very meager fillings in my beloved beef and bean burrito. To remedy the problem I obviously had to remake my homemade version and give this beef and bean burrito recipe a little sprucing.</p>

<p class="wp-block-paragraph">I modified my original recipe slightly by using nacho cheese dip instead of melted Velveeta cheese, increasing the ingredient volume slightly, and I wrapping them in regular white flour tortillas this time. Definitely no skimpy fillings to be seen here. </p>
