In reply to Susan. You could definitely cook it first or add it pre-oven. I definitely did not add enough spinach to constitute a serving of veggies so if you put a ton on I also probably would have been overwhlemed!.

In reply to Erin. Made this last week and really enjoyed it. Except I think I overdid the spinach. I think I'd like it better with the spinach cooked. Maybe I should make the spinach more of a garnish instead of expecting it to be the veggie for the meal? The roasted strawberry flavor really makes this one. It definitely lived up to my expectations.
