Get patriotic from the inside-out with these red white and blue Oreo cheesecake bites. As a bonus, the crust is made from Oreos which have popping candy in the filling for some firework action!

The fourth of July is tomorrow! Are you hosting a party or attending one? Or just staying at home? We are going over to a friends house and as usual are expected to bring a dessert in addition to a side of our choice.

In case you hadn’t already figured out what you were going to bring to the party, these patriotic mini Oreo cheesecakes will fit the bill. And if you are lucky enough to find the Firework Oreos with popping candy in the center then you’ll not only be watching fireworks, you’ll feel them going off in your mouth!

I must admit, these didn’t come out quite as cute as I has envisioned them to be. On the outside, the layers don’t look even due to some of the batter of the bottom color seeping down around the Oreo. Thankfully, the taste is not affected by such things.

As for the topping, I went with a dollop of yogurt and sprinkles because whipped cream doesn’t stay fluffy and pop rocks dissolve quickly. As much as I wanted whipped cream and pop rocks, I would have had to wait to assemble these until the party tomorrow.

FIREWORK OREO CHEESECAKE BITES

Ingredients

CRUST

• 12 Oreos (I used Firework Oreos with popping candy inside)

CHEESECAKE

• 8 oz. cream cheese, room temperature
• 1/2 cup sugar
• 1 egg
• 1 tsp vanilla extract
• 1/4 cup (2 oz.) vanilla Greek yogurt
• Red and blue gel or liquid food coloring

Directions

1. Preheat oven to 350 degrees. Place the Oreos in the bottom of a lightly greased 12 mini cheesecake cup pan.
2. In a large bowl with an electric beater, beat the cream cheese and sugar until smooth. Beat in egg and vanilla until combined. Stir in the Greek yogurt until incorporated.
3. Divide mixture into 3 small bowls (about 1/2 cup each). Add food coloring to make blue and red, leaving one white.
4. Starting with red, spoon approximately 2 teaspoons into the center each cup, repeat with white, and then top with blue. Bake for 25-30 minutes or until cheesecake is cooked through. Let cool completely.
5. Remove cheesecakes from pan and refrigerate until ready to serve. Decorate with whipped cream, sprinkles, and leftover Oreo cookies if desired.

Remember when I hosted a Back to the Future movie marathon complete with a different spread of food for each movie? Well here’s a straggler that I almost forgot about (and there are still two more). Originally I called this the “Pepsi Perfect” cocktail due to it’s appearance in Back to the Future Part II but I decided I didn’t like that name, especially since it’s more than just a glass of cola. It has not only whiskey and grenadine (which apparently is called a Bloody Jack when made with Jack Daniels) but also a rim of Pop Rocks making it electrifying! With that in mind my friend Haley suggested “Poppin’ Pepsi” and here we are. So next time you pour yourself a whiskey and coke feel free to add a little zing with a Pop Rocks rim.

The other items on the menu for this movie included dehydrated/rehydrated half pepperoni and half green pepper pizzas. And, actually I lied before, the Doc Brownies (which I still need to post) were saved for movie #2 because the “Great Butterscotch” boozy milkshake for movie #1 doubled up as the cocktail and dessert. Hard to keep all these things straight sometimes! So to recap:

• Part I: “Nobody calls me chicken” tenders (with Cheetos bread crumbs), Marty McFries, and the “Great Butterscotch!” milkshake.
• Part II: Dehydrated (mini) and rehydrated (regular sized) half pepperoni and half green pepper pizzas, Doc Brownies, and the Poppin’ Pepsi cocktail.
• Part III: Taco Train with carnitas and homemade salsa, cactus pretzels, guacamole cheese ball (will share after Easter), Cowboy cookies, and the Flux Incapacitator Margarita. Clearly I went a little overboard for the last movie, but whatever it was pure deliciousness.

POPPIN’ PEPSI PERFECT COCKTAIL

Serves 1

Ingredients:

Pop Rocks, for the rim

1.5 oz. whiskey

6 oz. cola (such as Pepsi)

1 oz. grenadine

Directions: 

1. Place water (or lime/lemon juice) in one shallow bowl and the Pop Rocks in another. Dip the rim of your glass into the water, shake off excess, and then dip into the Pop Rocks and grind back and forth gently to help the candy stick. 
2. Place a few ice cubes in the glass and pour whiskey over the ice. Add cola until the glass is nearly full, then add cherry grenadine. Mix together with a straw, and serve.
