<p class="wp-block-paragraph">It&#8217;s that time of year when turkey finally gets to be in the spotlight! But I am here to say that turkey shouldn&#8217;t be restricted. In fact I think turkey was meant for even greater things, such as Turkey Wellington – who says only beef gets to be wrapped all cozy in puff pastry anyway? </p>



<p class="wp-block-paragraph">I was first introduced to an alterative to Beef Wellington in a virtual cooking class during COVID lockdown where we made Beet Wellington. Spoiler alert, it&#8217;s just as good as the traditional version. I would know because we tried them side by side. </p>

<p class="wp-block-paragraph">So when it came to coming up with a fun new way to present turkey this season, I decided that if beets can be transformed into Wellington so can turkey. Heck, you can get half of the traditional seasonal recipes in one dish (turkey, cranberry sauce, and stuffing).</p>



<p class="wp-block-paragraph">For this Turkey Wellington recipe, three pounds of turkey breast tenderloins are butterflied, stuffed with cranberry sauce, surrounded by a mushroom-pecan stuffing, and wrapped in flaky puff pastry. Sure this Turkey Wellington is dressed to impress but it&#8217;s cozy enough to serve any time. </p>

<p class="wp-block-paragraph">To make things even easier, you have two chances to pause and refrigerate before continuing on with the recipe &#8211; after the turkey is cooked with the cranberry stuffed inside or when you&#8217;ve sealed it all in puff pastry.</p>



<p class="wp-block-paragraph">While this version of Turkey Wellington very much so pulls inspiration from traditional Thanksgiving dishes and flavors, you could easily substitute the cranberry sauce (or omit entirely) or change up the seasonings in the mushroom-pecan stuffing to fit different occasions. But since it is November I plated mine with steamed green beans, <a href="https://www.thespiffycookie.com/2011/01/05/blue-cheese-scalloped-potatoes/" title="Blue Cheese Scalloped Potatoes">blue cheese potatoes</a>, and drizzled with gravy.</p>

<p class="wp-block-paragraph">But even when cooking a fancy looking bird there are still rules to follow to ensure food safety. First, wash your hands and any other surfaces that come into contact with raw turkey before proceeding. Hand washing for at least 20 seconds is one of the simplest and most important health discoveries in history. I think we all can spare 20 seconds to make sure no one gets sick.</p>



<p class="wp-block-paragraph">Next, you will notice the recipe calls for the use of a meat thermometer to confirm the internal temperature of the turkey reaches 165°F. This ensures that the bacteria are killed and also means you do not need to rinse off your turkey. In fact I advise against it because what you&#8217;ll end up doing is spreading contaminated droplets all over your kitchen. Trust me, I&#8217;m a microbiologist.</p>



<p class="wp-block-paragraph">Finally, if you end up with more than enough turkey (usually 1-2 pounds per person for whole turkeys so 3 pounds of breast should serve 6) you need to store those <a href="https://www.thespiffycookie.com/2021/11/26/thanksgiving-leftovers-recipe-roundup/" title="Thanksgiving Leftovers Recipe Roundup">leftovers</a> in the fridge within 2 hours. Yes the bacteria were killed when cooking but unless your kitchen is completely sterile you reintroduced some when slicing and they multiple quickly &#8211; especially in moist warm things like freshly cooked meat. Won&#8217;t eat all the leftovers within 3-4 days? Turkey can also be frozen for 3-4 months.</p>

<li>3 lb. turkey breast tenderloin*</li>
<li>1 (14 oz.) can jellied cranberry sauce, cut lengthwise into quarters</li>
<li>1 Tbsp olive oil</li>
<li>Salt and pepper</li>
<li>1 sheet puff pastry, thawed</li>
<li>1 large egg beaten with 1 Tbsp water, for brushing</li>
</ul>
<p><span style="text-decoration: underline;">STUFFING</span></p>
<ul>
<li>1 Tbsp unsalted butter</li>
<li>1 large shallot, finely diced</li>
<li>16 oz. mixed mushrooms**, pulsed in food processor until pureed</li>
<li>1 cup fresh breadcrumbs</li>
<li>1/2 cup pecans, toasted and chopped</li>
<li>1 Tbsp fresh thyme, minced</li>
<li>1 Tbsp fresh rosemary, minced</li>
<li>1 Tbsp fresh sage, minced</li>
<li>3 large eggs, divided</li>
<li>Salt and pepper, to taste</li>
</ul>

                    <h3 class="penci-recipe-title">Directions</h3>
					<ol>
<li>For the turkey: Preheat oven to 350°F. </li>
<li>Place turkey breasts on a cutting board and carefully butterfly slice open like a book. Arrange the narrow portions to slightly overlap one another to form a rectangular shape the best you can. Season with salt and pepper, then place the quartered cranberry sauce jelly lengthwise down the middle of the turkey. </li>
<li>Fold the breasts back on themselves, sealing the cranberry sauce inside, using a few toothpicks and/or cooking twine to secure the seams together. </li>
<li>Transfer the turkey to a roasting tray, drizzle with olive oil and season with salt and pepper. Cover with foil and roast in the oven for 60-70 minutes, or until a meat thermometer reads 165°F at the thickest part. Remove from the oven and allow to cool completely. Remove the cocktail sticks and/or twine if using (you can stop here and refrigerate overnight or proceed).</li>
<li>Meanwhile prepare the stuffing: in a medium skillet, melt butter over medium heat. Add shallot and cook until translucent, about 5 minutes. Remove from pan to a large bowl; set aside.</li>
<li>Return pan over medium heat and add mushroom puree. Cook until mushrooms have released their moisture and boiled away, about 10 minutes. Remove from pan to the bowl with the onions. </li>
<li>To the mushroom-onion mixture, add<span class="wprm-inline-ingredient wprm-inline-ingredient-35871-6 wprm-block-text-bold"> fresh breadcrumbs</span>, <span class="wprm-inline-ingredient wprm-inline-ingredient-35871-7 wprm-block-text-bold">pecans</span>,<span class="wprm-inline-ingredient wprm-inline-ingredient-35871-9 wprm-block-text-bold"> thyme</span>, <span class="wprm-inline-ingredient wprm-inline-ingredient-35871-10 wprm-block-text-bold">rosemary,</span> and<span class="wprm-inline-ingredient wprm-inline-ingredient-35871-11 wprm-block-text-bold"> sage</span>. Mix until evenly distributed. Add <span class="wprm-inline-ingredient wprm-inline-ingredient-35871-12 wprm-block-text-bold">2 eggs</span> and season <span class="wprm-inline-ingredient wprm-inline-ingredient-35871-13 wprm-block-text-bold">salt</span> and <span class="wprm-inline-ingredient wprm-inline-ingredient-35871-21 wprm-block-text-bold">pepper, m</span>ixing until thoroughly combined. </li>
<li>Dust a large sheet of greaseproof paper with flour, then roll out the puff pastry sheet to a size that will wrap around the turkey. Spread 2/3 of the mushroom stuffing onto the middle of the puff pastry to cover the bottom and sides of the turkey.</li>
<li>Place the turkey breast on top and spread the remaining stuffing over the top packing it all in and smoothing it out so that the whole breast is covered. Gently fold the puff pastry over the breast, pushing out excess air and press the seams together to seal. </li>
<li>Brush with remaining egg, beaten with 1 tablespoon of water (you can stop here and refrigerate overnight or proceed).</li>
<li>When ready, preheat oven to 350°F and cook for 40-50 minutes, or until beautifully golden and the turkey has an internal temperature of 165°F. Remove from the oven and leave to cool for around 20 minutes before slicing.</li>
<li>Serve with gravy and your favorites sides. Refrigerate leftovers within 2 hours for 3-4 days or frozen for 3-4 months.</li>

<p class="wp-block-paragraph">Just last night a friend told me that pork is dry and inferior to other meats. I am here to strongly oppose that opinion because I have cooked pork so many different ways and as long as you cook it properly, it shouldn&#8217;t be dry.</p>



<p class="wp-block-paragraph">A common misconception is that you need to cook pork until it&#8217;s not longer pink but just like a cut of steak it&#8217;s perfectly okay to have a blush of pink inside as long as it reaches an internal temperature of 145°F. Pork cuts like tenderloin and chops should always be cooked to an internal temperature of 145°F no matter what cooking technique you use. </p>

<h2 class="wp-block-heading">What do you need to make Baked Pork Chops and Stuffing?</h2>

<p class="wp-block-paragraph">Similar to my <a href="https://www.thespiffycookie.com/2024/03/25/cast-iron-pork-tenderloin/" title="Cast Iron Pork Tenderloin">cast iron pork tenderloin</a>, this baked pork chops and stuffing dish is cooked in just one cast iron skillet. <a href="https://www.thespiffycookie.com/2021/05/09/moms-favorite-recipes/" title="Mom’s Favorite Recipes">My mom&#8217;s recipe</a> card directed you to transfer the seared pork chops from the the skillet into a baking dish, but I decided that step was unnecessary. Unless of course you do not own a cast iron skillet or other oven-proof skillet, in which case by all means swap into a baking dish.</p>



<p class="wp-block-paragraph">Regardless of whether you bake it in the skillet or transfer to another pan, just remember to have an instant read meat thermometer handy to ensure it reaches an internal temperature 145°F. </p>

<p class="wp-block-paragraph">The end result? A very moist, definitely not dry, pork chop topped with tender mushroom stuffing. My mom suggested to serve it with applesauce, baked potato (<a href="https://www.windingcreekranch.org/twice-baked-mashed-potato-recipe/" target="_blank" rel="noopener" title="twice baked mashed potatoes">twice baked mashed potatoes</a> would also be good), and a side salad, but I couldn&#8217;t get my husband on board with the applesauce. Surely there are more people out there who enjoy applesauce with pork? Don&#8217;t leave me hanging.</p>



<p class="wp-block-paragraph">Applesauce aside, my husband loved this recipe and said it tastes like Thanksgiving except with juicy pork chops instead of turkey. While this recipe will taste like comfort food, just know that pork is packed with protein, selenium, and choline to keep you motivated and energized. 					<ol>
<li>Preheat oven to 350 degrees F.</li>
<li>In a large bowl, toss together the bread cubes, onion, butter, 1/4 cup water, and seasoning. Set aside.</li>
<li>In a small bowl, whisk together the condensed soup and 1/3 cup water. Set aside.</li>
<li>Season pork chops on both sides with salt and pepper.</li>
<li>In a large cast iron skillet** over medium heat, sear the pork chops, about 2-3 minutes per side.</li>
<li>Remove from heat, place a mound of stuffing on top of each pork chop, then pour mushroom soup mixture over the top.</li>
<li>Cover skillet with foil, transfer to the oven, and bake for 45 minutes. Uncover and bake another 15 minutes or until the internal temperature reaches 145 degrees F***.</li>
<li>Serve immediately with a baked potato and a side salad.</li>

<p>I hate food waste. I try very hard to plan meals around what needs to be used up first, freezing anything that can be frozen if needed, and finding new purposes for leftovers. But even when I am the most diligent there are still bits of waste that could be of use still.</p>
<p>I&#8217;m talking about all the scraps that arise from peeling and chopping vegetables for various recipes or general eating. Sure it may not seem like much, but we have not purchased our own vegetable broth (or <a href="https://www.thespiffycookie.com/2014/11/20/roasted-poultry-stock/">poultry stock</a>) in years because we make our own out of the scraps!</p>
<p>We do have a <a href="https://amzn.to/3aLyYog" target="_blank" rel="nofollow noopener noreferrer">composter</a> but not all food scraps should be pigeon-holed into one role, at least not at first. Instead, start a new habit to celebrate <span style="font-weight: 400;">#NationalStopFoodWasteDay and </span>save those vegetable scraps in a gallon sized zip-top freezer bag until it is stuffed full.</p>

<p>Things that you should save for vegetable broth include: onion, celery, carrot, bell pepper, tomato, squash guts, mushroom stems, garlic skins, and herb stems (parsley, rosemary, thyme). Of course you could also make a specific flavored broth by going heavy on one component, such as a <a href="https://turbotasty.com/how-to-make-delicious-mushroom-broth/" target="_blank" rel="noopener">mushroom broth</a>.</p>
<p>However, these should not go into your broth: stems from leafy greens, zucchini, cucumber, broccoli, cauliflower, potato, and beets. Basically, no starchy veggies. Save those scraps for the <a href="https://amzn.to/3bJjiDC" target="_blank" rel="nofollow noopener noreferrer">compost pile</a>.</p>
<p>But now, how to make vegetable broth from scraps? When you are ready, all you need are bay leaves, water, and a <a href="https://amzn.to/2ySnLFc" target="_blank" rel="nofollow noopener noreferrer">large stock pot</a>. Once processed, you can can the broth or freeze it until you are ready to use it. And those boiled vegetables? Now you can toss them into the composter!</p>

When you think of Thanksgiving (or other winter holiday) side dishes, I bet green bean casserole is the first that comes to mind for many people. Besides my general aversion to green food as a child, I also disliked the mushy consistency due to used canned beans. That stuck with me even after I started eating green vegetables in college.</p>
<p>But then I tried making them myself with fresh green beans, such as in <a href="https://savingtalents.com/green-bean-artichoke-casserole-recipe/">green bean artichoke casserole</a>, and it was a total game changer.</p>

<p>When I decided to add okra instead of green beans, to fit my themed Thanksgiving menu (thus far with <a href="https://www.thespiffycookie.com/2019/10/21/cranberry-sweet-tea-sangria/">sweet tea sangria</a>, <a href="https://www.thespiffycookie.com/2019/10/24/creamy-poblano-bacon-gravy/">poblano bacon gravy</a>, <a href="https://www.thespiffycookie.com/2019/10/28/smoked-cheddar-macaroni-cheese/">smoked mac &amp; cheese</a>, and <a href="https://girlcarnivore.com/smoked-thanksgiving-turkey/" target="_blank" rel="noopener noreferrer">smoked turkey</a>), it should come as no surprise that I did not use canned.</p>
<p>That being said however, okra is a pretty tough guy and I bet using a can wouldn&#8217;t be nearly as offensively mushy. I just wasn&#8217;t willing to take that risk. But in case you cannot readily find fresh okra, frozen will work as well.</p>

<h2><span style="text-decoration: underline;"><strong>CHEESY OKRA CASSEROLE</strong></span></h2>
<p><em>Serves 6</em></p>
<p><strong>Ingredients:</strong></p>
<p>3/4 cup milk</p>
<p>1 (10.75 oz.) can cream of mushroom soup</p>
<p>1 lb. fresh (or frozen) okra, steamed and chopped</p>
<p>3/4 cup shredded cheddar cheese, divided</p>
<p>1 (2.8 oz.) can French fried onions, divided</p>
<p>Salt and pepper, to taste</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 350. Grease a medium baking dish ans set aside.</li>
<li>In a large bowl, whisk together the milk and soup. Stir in the okra, 1/2 cup of the cheese, and 1/2 the can of fried onions. Season to taste with salt and pepper.</li>
<li>Spread evenly into the prepared baking dish and bake for 25 minutes, or until bubbly. Top with remaining cheese and fried onions, and bake 5 more minutes, or until melted and toasted.</li>

<p>My laptop computer has been on the fritz lately. More than half of the time it freezes up doing even the simplest tasks such as opening Word. (Imagine my annoyance trying to work on this post.) I&#8217;ve scanned, rescanned, and cleaned out some files but nothing has helped. Granted it is pushing 7 years old but it spent 2 of those years not connected to the internet. That had to save it a little bit right?</p>
<p>Either way, I have a bad feeling it is on its last leg and have begun baking up all the important files. I don&#8217;t think I could handle a scare like that after my <a title="Blueberry-Flax Buttermilk Pancakes" href="https://www.thespiffycookie.com/2014/01/16/blueberry-flax-buttermilk-pancakes/">USB incident</a>.</p>
<p>Anyway, I am sure what you are really interested in is this breakfast casserole. It has the works for making up my favorite kind of breakfast casserole: sausage, egg, cheese, bell peppers, and croutons. Or you could use stuffing. Or have a lot of fun and make <a href="https://quichemygrits.com/best-crescent-roll-breakfast-casserole/" target="_blank" rel="noopener">crescent roll breakfast casserole</a>. Honestly, pick your carb.</p>
<p>Be aware the you must prepare it the night before and takes about an hour to cook, which is unsuitable for most weekday breakfasts, but perfect for weekends, brunch or even breakfast for dinner!</p>

<h3><span style="text-decoration: underline;"><strong>SAUSAGE AND EGG BREAKFAST CASSEROLE</strong></span></h3>
<p><em>Serves 12</em></p>
<p><strong>Ingredients:</strong></p>
<p>3 cups seasoned croutons or stuffing mix</p>
<p>1 lb. breakfast sausage</p>
<p>2 cup shredded cheddar cheese</p>
<p>2 bell peppers, chopped</p>
<p>1 (10 oz.) can cream of mushroom soup</p>
<p>2 cups milk</p>
<p>8 eggs</p>
<p>3/4 tsp dry mustard</p>
<p><strong>Directions:</strong></p>
<ol>
<li>The night before: Place croutons in the bottom of a lightly greased 9&#215;13-inch baking dish.</li>
<li>In a large skillet, crumble the sausage and cook until browned. Drain and sprinkle evenly over the croutons, followed by the cheese and chopped bell peppers</li>
<li>In a large bowl, whisk together the soup, milk, eggs and dry mustard. Pour over casserole mixture. Cover and refrigerate overnight.</li>
<li>In the morning, preheat oven to 325 degrees. Bake for 1 hr or until set. Allow too cool slightly before serving.</li>

<p class="wp-block-paragraph">When I think of of baby shower food, bite-sized items comes to mind. Little food to celebrate a little person! Super creative I know, but these wonton cups are the perfect size by using a mini muffin pan. And they are flipping delicious. The recipe came from my friend Brandi but I have seen similar versions with different fillings such as <a href="https://www.organizedisland.com/taco-cups/" target="_blank" rel="noopener" title="taco cups">taco cups</a>. </p>



<p class="wp-block-paragraph">The first time she made them, if I had known there were olives and mushrooms involved I may have never tried them but am so very glad that I did! It&#8217;s surprising how much I enjoy these wonton cups being that they contain two things I normally put forth a large effort to avoid. I blame it on all the cheesy sausage goodness and crispy exterior.</p>



<p class="wp-block-paragraph">These sausage wonton appetizers are best when served immediately. If you somehow have some leftover, do not reheat in the microwave as the wontons will not be crispy. I recommend a toaster oven or regular oven.</p>

<li>1 lb. bulk pork sausage</li>
<li>1 tsp ground sage</li>
<li>Salt and pepper</li>
<li>1 large red bell pepper, finely chopped</li>
<li>1 (4 oz.) can diced black olives</li>
<li>1 (4 oz.) can diced mushrooms</li>
<li>4 cups (16 oz.) shredded pepperjack or sharp cheddar cheese</li>
<li>3/4 cup prepared Ranch dressing</li>
<li>1 pkg. (12 oz.) wonton wrappers</li>
</ul>

                    <h3 class="penci-recipe-title">Directions</h3>
					<ol>
<li>Preheat oven to 350 degrees. Lightly grease two mini muffin pans, set side.</li>
<li>In a large skillet add sausage, sage, and salt and pepper to taste. Break up sausage and saute until no longer pink. Remove and drain on paper towel-lined plate to cool.</li>
<li>Press half of the wonton wrappers into the cups of the prepared mini muffin tins. Bake for five minutes.</li>
<li>Meanwhile, in a large bowl mix together the bell pepper, olives, mushrooms, cheese, and ranch. Add cooled sausage and mix well.</li>
<li>Remove wonton cups from oven. Using half of the filling mixture, fill the cups. Bake 8-10 minutes more, or until golden and crispy. Repeat with remaining wonton wrappers and filling.</li>
<li>Serve immediately. Store any leftovers in the fridge and reheat in oven or toaster oven.</li>

										<content:encoded><![CDATA[<p>When you think of an Alfredo sauce, &#8220;light&#8221; is not the first word that normally pops into your head to describe it. So when I was given a sample of Classico&#8217;s new light Alfredo pasta sauce, I&#8217;d be lying if I said I weren&#8217;t skeptical. 50% less fat at 45% fewer calories (60 cal/serving)? But aren&#8217;t fat and calories the reason why Alfredo sauce is so good to begin with? Why rob it&#8217;s characteristics?</p>
<p>This skeptic was proven wrong &#8211; this sauce was great. I couldn&#8217;t tell it was a lighter version at all. Granted I did not eat it by itself, but who sits down with a bowl of Alfredo for dinner? I won&#8217;t judge you if you do, because pasta is just a vehicle for sauce to get into my mouth anyway. However, this dish has no pasta at all. Instead there are buttery biscuits on top, MmMmm!! Definitely making this again, and will be looking for this light Alfredo sauce on the shelf the next time pasta sauce is on my grocery list.</p>

<p><span style="text-decoration: underline;"><strong>CHICKEN ALFREDO BISCUIT CASSEROLE</strong></span></p>
<p><em>Serves 5</em></p>
<p><strong>Ingredients:</strong></p>
<p>2 Tbsp butter, divided</p>
<p>2 cups sliced fresh mushrooms</p>
<p>1/2 cup chopped onion</p>
<p>1 clove garlic, minced</p>
<p>1 jar (15 oz) <a href="http://www.classico.com/light-alfredo-sauces/light-creamy-alfredo-pasta-sauce.aspx" target="_blank">Classico light creamy Alfredo pasta sauce</a></p>
<p>1/4 cup milk</p>
<p>2 cups chopped cooked chicken</p>
<p>2 cups frozen broccoli florets, thawed</p>
<p>1/4 cup + 1 Tbsp grated Parmesan cheese, divided</p>
<p>1/4 tsp dried basil leaves</p>
<p>Salt and pepper</p>
<p>1 can (10 biscuits) refrigerated buttermilk biscuits</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Heat oven to 375 degrees. Spray 8-inch square (2-quart) glass baking dish with cooking spray.</li>
<li>In 10-inch nonstick skillet, melt 1 tablespoon butter over medium heat. Cook mushrooms, onion and garlic in butter, stirring occasionally, about 5 minutes or until tender. Stir in Alfredo sauce, milk, chicken, broccoli, 1/4 cup Parmesan and basil. Season with salt and pepper to taste. Cook until mixture is thoroughly heated and bubbly, stirring constantly. Spoon into baking dish.</li>
<li>Separate dough into 10 biscuits. Cut each biscuit in half crosswise. Arrange around edge of baking dish, overlapping slightly. Drizzle biscuits with remaining 1 tablespoon melted butter; sprinkle with 1 tablespoon Parmesan cheese.</li>
<li>Bake 15 to 20 minutes or until biscuits are golden brown.</li>
</ol>

										<content:encoded><![CDATA[<p>Brent and I spent most of Sunday and Monday house hunting in Cape Girardeau, MO. It&#8217;s exhausting! Even though I won&#8217;t be living there, I am obviously the one who will be using the kitchen most during weekend visits, so I was all over the kitchens in every house haha. But I felt a little weird when the kids were home at one house. Don&#8217;t mind me, just a stranger snooping through your things and opening all your doors. Found a couple that we both thought were great, and one in particular tops the list. Just gotta deal with the financing now (sooo glad he&#8217;s the one buying a house and not me!).</p>
<p>I&#8217;m not moving there, at least not yet. I have two more years left in my PhD program in Memphis before I am set free. But Brent <a title="Avocado Fries" href="https://www.thespiffycookie.com/2011/05/09/avocado-fries/" target="_blank">recently graduated</a>, is now a bona fide PA-C, and accepted a job there working in Neurosurgery at St. Francis. It seems like a great place to work and I enjoy the town. Honeslty I think I could live there when I am done. But for now, it&#8217;s only 2.5 hours away (and 1.5 hours south of St. Louis), which is only a little further than when he was still taking classes in McKenzie, TN so I don&#8217;t think it&#8217;ll be bad. Although it will be strange not living together anymore. Who am I going to cook for!? I am going to have far too many leftovers and will talk to my cat too much&#8230; beware of the cat lady sickness!</p>
<p>Thankfully I made this dish while he is still here because I don&#8217;t think I could have resisted eating the entire pan had I been left to myself. Brent&#8217;s friend, Steve, was in from out of town as well so between the three of us there was absolutely no chance for leftovers. Steve proceeded to request it every meal for the duration of his stay. I thought about caving in to such a request, because it really was that good! But there are far too many other things I want to cook.</p>
<p>P.S. Today is Brent&#8217;s 28th birthday! A group of friends are going out to  dinner tonight, and I am going to make him a fabulous dessert (which he  may hate/love me for). I&#8217;ll be posting it tomorrow.</p>

<p><strong>Ingredients</strong>:</p>
<p>2 containers refrigerated biscuit dough, 6 biscuits each (I used Pillsbury)</p>
<p>1 jar pizza sauce</p>
<p>2 cups shredded fresh mozzarella cheese, divided</p>
<p>1/4 cup quartered Turkey pepperoni</p>
<p>1/4 cup chopped mushrooms</p>
<p>1/4 cup chopped yellow onion</p>
<p>1/4 cup sliced green bell pepper</p>
<p>Dried Basil</p>
<p><strong>Directions:</strong></p>
<ol>
<li><strong></strong> Preheat oven as per directions on  dough.  With a sharp knife, divide each biscuit into 4.  In a large  bowl, combine diced biscuit dough, sauce, 1-1/2 cups cheese and  toppings. Stir to combine.</li>
<li>Pour mixture into greased oven safe skillet or 9×13 baking pan. Sprinkle the remaining cheese on top along with the dried basil.  Bake according to directions on dough, checking to make sure dough is  cooked through and cheese is bubbling (I baked mine for an  additional 5 minutes.)  Let cool 5 minutes before serving.</li>
