Will I ever run out of peanut butter and chocolate recipe ideas? Who knows but today is not that day!

Inspired by my Buckeye Bundt cake, this buckeye banana bread has a chocolate banana bread base and a peanut buttercream cheese filling that when sliced resembles a buckeye. Of course I had to also drizzle the top with peanut butter and mini buckeye candies while I was at it.

I have actually been waiting to make this recipe for over a week as the bananas at the grocery store were all very underripe and it took that long for them to finally ripen enough to make this buckeye banana bread of my dreams. But some dreams are worth waiting for, and banana bread made with underripe bananas is not worth rushing it.

Speaking of waiting, even though banana bread is usually considered a breakfast item, the peanut butter cream cheese filling pushes it into the dessert category in my mind. But no judgement if you cannot wait and want to eat it for breakfast before the game.

Speaking of the game (not to be confused with THE game next week), Ohio State’s last home game of the season is today against Rutgers. Unfortunately two of our star receivers are out but I have a feeling we will do just find in their absence. Sorry Rutgers.

Once todays game is over it is officially the start of Beat *ichigan Week! Which means I have to have something extra special up my sleeve for the last game of the regular season. Especially since family will be in town for the holiday weekend to help us eat it!

BUCKEYE BANANA BREAD

Yield: 1 loaf Prep Time: 30 Minutes Cooking Time: 1 Hour 1 Hour

Ingredients

FILLING

• 3/4 cup creamy peanut butter
• 4 oz. cream cheese, room temperature
• 1/4 cup powdered sugar
• 1 egg
• 3 Tbsp milk

BREAD

• 3 very ripe bananas, mashed
• 4 Tbsp unsalted butter, melted
• 1/2 cup sugar
• 1/4 cup brown sugar
• 1 egg, beaten
• 1-1/4 cup all-purpose flour
• 1/4 cup unsweetened cocoa powder
• 1 tsp baking soda
• 1/4 tsp salt
• 1/4 cup creamy peanut butter
• 1/4 cup mini Buckeye candies

Directions

1. Preheat oven to 350. Lightly grease a 9x5-inch loaf pan and set aside.
2. For the filling: In a medium bowl, blend together the peanut butter filling with a hand mixer until smooth. Scoop the filling into a pastry bag (or a zip top bag with the corner snipped off*). Place in the refrigerator until ready to use.
3. In a large bowl, combine mashed bananas with melted butter and sugars, mixing well. Add the egg and beat well.
4. Stir in the flour, cocoa powder, baking soda, and salt until incorporated. Be careful not to over mix!
5. Spread 3/4 of the batter evenly in prepared pan. Using the pastry bag that has the peanut butter mixture, carefully pipe a thick line of the filling over the center of the chocolate batter. Pour the remaining batter on top.
6. Bake for 1 hour or until a toothpick inserted into the center comes out with moist crumbs (but no batter).
7. Allow to cool in pan 10 minutes before removing to a wire rack to cool completely.
8. Heat peanut butter in a small microwave safe bowl for 10 seconds. Drizzle over cool bread, decorate with mini buckeyes, and let set before slicing and serving.

*No piping tip necessary as we want a nice big opening.

This is it guys – the final College Football Playoff Championship game is tonight, Ohio State versus Notre Dame! Which means I had to make just one more buckeye-themed recipe for the occasion. Between the impact of the transfer portal and the first year of the 12-team playoff, this has been an exciting season and one of my favorites ever. Obviously if we win tonight it will be that much sweeter.

For todays treat I wanted to continue the trend of pulling inspiration from the state in which the schools reside but I already did a Buckeye Sugar Cream Pie when we played Indiana. I waffled between a buckeye car bomb poke cake and a buckeye cocktail utilizing Irish whiskey and or cream but then I remembered Lucky Charms cereal exists and had to run with it to make a buckeye version of Lucky Charms chocolate chip cookies – AKA lucky buckeye chocolate chip cookies! (Not to be confused with my buckeye stuffed peanut butter chocolate chip cookies.)

I used my favorite chocolate chip cookies as a base but replaced some of the chocolate chips with miniature buckeye candies. I thought about making miniature homemade buckeyes, but that would have taken more time than I cared to endure at the moment. Alternatively, I did take the time to sort of the marshmallows from a box of Lucky Charms cereal. Even though you can buy just the cereal marshmallows, I wanted those little shamrock hats which those don’t include. I had to pick my battles for these cookies.

Hopefully, just like the box indicates, these Lucky buckeye chocolate chip cookies will bring our team to life (hearts), give them the power to fly past their opponents (stars), help with speed (horseshoes), bring good luck (clovers), make them invisible (blue moons), be full of color (unicorns), teleport across the field (rainbows), and float the ball down the field (balloons). That combined with the mini buckeye candies these cookies are truly, magically delicious! Maybe you’ll also save the plain cereal you sorted out to make some cereal milk to serve with them ;-).

LUCKY BUCKEYE CHOCOALTE CHIP COOKIES

Ingredients

• 2-1/4 cups all-purpose flour, spooned and leveled
• 1 tsp baking soda
• 1 tsp salt
• 1 cup (2 sticks) unsalted butter, melted and cooled
• 1 cup packed dark brown sugar
• 1/2 cup white sugar
• 1 Tbsp vanilla extract
• 1 egg + 1 yolk, room temperature
• 1-1/2 cups semisweet chocolate chips
• 1-1/2 cups mini Buckeye candies
• 1-1/2 cups marshmallows separated from Lucky Charms cereal (or purchase pre-sorted)

Directions

1. Sift together the flour, baking soda, and salt; set aside.
2. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended (1-2 minutes). Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients in three batches until just blended. Using a rubber spatula, fold in the chocolate chips, mini buckeyes, and marshmallows by hand.
3. Roll 2 tablespoons of dough* into a ball that is slightly taller than wide and place on a plate or tray. Cover tightly and chill for at least 2 hours**, but overnight for best results.
4. Preheat oven to 350 degrees F. Line cookie sheets with silicone baking mats (or parchment paper); set aside.
5. Place cookie dough onto the prepared cookie sheets, about 2 inches apart.
6. Bake for 10 minutes or until edges are barely golden (will look underbaked). Cool on baking sheets for 10 minutes before transferring to wire racks to cool completely. Store at room temperature in an airtight container.

Notes

* You can also use a 1/4 cup scoop and cook them another 2-4 minutes (will yield less obviously). ** Don't want to wait to chill? They will still bake just fine but the flavor/texture improves when chilled.

Usually I limit myself to one new buckeye variation a season, but with #HalloweenTreatsWeek ending today I just couldn’t resist combining it with my personal weekly celebration of #PBchocSat, but who can complain about more buckeye candies?

My husband being a Penn State alum usually insists that they are called peanut butter balls, not buckeyes, and he would be right if they were fully coated in chocolate. But clearly these are buckeyes, monster eye buckeyes in fact.

I combined the deliciously packed monster cookie dough with the classic buckeye candy into one. So not only is the center peanut butter, but also oats, chocolate chips, and M&Ms. I have made a peanut butter chocolate chip cookie buckeye before, but these are even more special.

To give them that slit monster eye look for Halloween, you dip just one side then the other instead of swirling to get a more round opening. Once hardened, take out the toothpick and cover the hole with another M&M. Just make sure you devour them first before they get to you ;-).

MONSTER COOKIE BUCKEYES

Yield: 8 dozen Prep Time: 1 Hour

Ingredients

• 1 cup unsalted butter, room temperature
• 1 cup loosely packed brown sugar
• 1-1/2 cups creamy peanut butter
• 1 tsp vanilla extract
• 1/2 tsp salt
• 2 cups quick-cooking oats (heat treated*)
• 2 cups sifted powdered sugar
• 1 cup mini semisweet chocolate chips
• 1 cup mini candy-coated chocolate pieces
• 12 oz. semi-sweet chocolate, for coating
• Wooden toothpicks, preferably round

Directions

1. Line two baking sheets with waxed paper; set aside.
2. In a medium bowl, cream together the butter and brown sugar until light and fluffy, about 2-3 minutes. Mix in the peanut butter, vanilla, and salt, Add the oats and mix until combined. Next add the powdered sugar one half cup at a time to reach desired consistency. Fold in the mini chocolate chips and candy-coated chocolate pieces.
3. Shape into balls using 2 teaspoons of dough for each ball (or a small cookie scoop). Place on prepared pan, insert a wooden toothpick, and place in the freezer.
4. Melt chocolate in a double boiler (or metal/glass bowl over a pot of lightly simmering water). Stir occasionally until smooth, and remove from heat.
5. Remove balls from freezer. Dip into melted chocolate leaving a eye-shaped slit uncovered at the base of the toothpick. Return to wax paper, chocolate side down. Repeat with remaining balls.
6. Refrigerate for 30 minutes or until set. Remove toothpicks and cover the holes left behind with a candy-coated chocolate.

Alright folks, it’s time for this season’s buckeye candy flavor! I should probably do a round up post of every recipe available because counting today I have made 11 kinds to date – 12 if you count my giant buckeye cheese ball. And countless other buckeye-inspired treats.

This season I went with Oreo! Literally just add crushed Oreos to the original recipe, it’s that simple.

I’m not sure why it took me this long to make an Oreo version, I’ve combined Oreos in plenty of other peanut butter creations to know how delicious the results are, but they are finally here!

Not that I am surprised, but my cookies and cream, peanut butter cup loving husband loved these. He even gave me a warning that I have to be careful around them because one jumped right into his mouth. Glad he’s looking out for me :-P.

Sometimes you will see buckeye candies without the hole from the toothpick. I like to leave it because then you know they ae homemade, but if you prefer a fancier looking nut you can smudge it with a clean finger.

Here are some other tips for successfully making Oreo buckeyes (or any other variety):

• Don’t have a double boiler? Use a metal or glass bowl that fits over (but doesn’t touch on the bottom) a pot of gently simmering water. Alternatively you can microwave in intervals, stirring in between.
• Even though true buckeyes by nature are misshapen and irregular, get more uniform sizes by using a small cookie scoop. If nothing else, it makes forming the balls easier.
• Use round toothpicks, the flat ones often break.

OREO BUCKEYES

• 16 Oreo chocolate sandwich cookies, crushed

• Wooden toothpicks, preferably round

Directions

1. Line two baking sheets with waxed paper; set aside.
2. In a medium bowl, mix peanut butter, butter, and vanilla. Add Oreo crumbs, then powdered sugar one cup at a time to reach desired consistency, then use hands to form a smooth dough.

I love a good campfire s’mores, especially made with peanut butter cups. But it’s football season so let’s make easy buckeye s’mores worthy of a tailgate!

Not to be confused with my Smore’s Buckeyes (which are stuffed with mini chocolate chips, graham crackers, and coated in chocolate), today I am sharing a non-recipe for buckeye s’mores – smore’s made with buckeye candies as opposed to a bar of chocolate or my favorite, peanut butter cups.

While the weather has been perfect lately for a bonfire with s’mores, if you don’t have the ability to sit around a fire toasting marshmallows, I am sharing a method that uses your broiler instead. The added benefit is that you can make a bunch at once!

Line a cookie sheet with the graham cracker squares, top half with marshmallows and the other half with buckeyes. Place under the broil until desired toasted level has been reached, sandwich together, and enjoy.

But what if you are out tailgating at the game without a fire pit or broiler? You can easily make these s’mores on the grill. Either place the cookie sheet/foil on the grill of you can individually wrap each one in foil and place directly on the grill.

EASY BUCKEYE SMORES

Yield: 4 servings Prep Time: 5 Minutes Cooking Time: 1 Minute 1 Minute

Nutrition facts: 200 calories 20 grams fat

Ingredients

• 8 graham cracker squares (4 whole rectangles split in half)
• 4 large marshmallows (or 16 mini)
• 4 buckeye candies

Directions

1. Preheat broiler and line a small cookie sheet with foil.
2. Place crackers on the prepared cookie sheet, with the perforated sides facing down. On four crackers place the buckeye candies, and on each of the other four place a marshmallow.
3. Place in oven until lightly toasted and the buckeye starts to melt. Watch carefully because the marshmallows will toast very quickly, about 30 seconds to 1 minute. Remove from oven and immediately sandwich together, matching a marshmallow with a buckeye. Serve immediately.

This week for #PBchocSat I am feeling the pressure of all the recipes I’ve been pumping out lately and decided to tone it down a bit. Originally I had planned on making a full batch of scones, but why do that when we are are household of two?

So I dig out my recipe for a single serving scone and made a buckeye version – it even looks like a buckeye! Since this is breakfast we are talking about, I used white whole wheat flour and powdered peanut butter so you can try to convince yourself that it’s “healthier”.

This recipe is easy enough to throw together and therefore worth the effort to make just one – especially if you have a small food processor handy. Even more bonus points if you have a toaster oven so you don’t have to heat up the entire full-sized oven for one scone. But again, worth it.

Just don’t do what I did and forget to add the baking powder the first time you make it or it’ll be a brick. Second time’s the charm!

SINGLE SERVING BUCKEYE SCONE

Ingredients

• 1/3 cup white whole wheat flour
• 1-1/2 Tbsp sugar
• 1/2 tsp baking powder
• 1/4 tsp salt
• 1Tbsp cold unsalted butter, cut into small cubes
• 3 Tbsp milk
• 2 Tbsp powdered peanut butter
• 1/2 Tbsp cocoa powder

Directions

1. Preheat oven (or toaster oven) to 450. Line a small baking sheet with parchment paper, silpat or lightly greased foil.
2. In a (preferably) small food processor* pulse together the flour, sugar, baking powder, and salt. Add butter and pulse just until it resembles moist crumbs. Add the milk and powdered peanut butter and pulse until the dough pulls away from the side of the mixer.
3. Remove a tablespoon of dough, roll into a ball, and set aside. To the remaining dough, add cocoa powder and pulse until blended.
4. Carefully remove and roll into a flattened ball, about 2-inches thick. Place on prepared baking sheet. Top with peanut butter dough ball and flatten together until about 1 inch thick. Bake for 8-12 minutes or until golden brown. Let cool slightly before serving.

Notes

*Alternatively, you could mix in a small bowl, cut the butter into the dough with a fork or two knives, and blend in the remaining ingredients with a wooden spoon of hand mixer.

Another Ohio State Buckeyes football season means it’s time for another buckeye candy variety!

I already prepared you for this moment last week when I shared a roundup of buckeye recipes, which included all my past buckeye variations. And while today may not be Saturday, the first game is tonight so we are celebrating #PBchocSat a couple days early.

After scorching temperatures last week I am welcoming these high 70s with open arms. Which means it’s also finally cool enough in the evenings to have a bonfire which means s’mores! And that my friends is how I found inspiration for these buckeyes.

I was honestly struggling to think of something new but once the idea of a s’mores buckeye popped in my head there was no longer any question as to what I was going to make.

What are S’mores Buckeyes?

Not to be confused with s’mores made with a buckeye instead of a chocolate bar (although as you can see above I did do that as well), these buckeyes replace the butter in traditional buckeyes with marshmallow creme and some of the powdered sugar with graham cracker crumbs.

And then I stuffed each of them with a mini marshmallow, and sprinkled with more graham cracker crumbs after being dipped in chocolate just in case you had any doubt to what kind of buckeye you are dealing with.

My Penn State alum husband normally refuses to call them buckeyes, but he did stare at me intensely upon trying one until he finally proclaimed them to be the best buckeyes he’s ever had. If that’s not a win I don’t know what is.

Here’s to hoping the Buckeye football team also starts the season with a win.

S'MORES BUCKEYES

Yield: 6 dozen Prep Time: 2 Hours

Nutrition facts: 200 calories 20 grams fat

Ingredients

• 1-1/2 cups creamy peanut butter
• 14 oz. marshmallow creme
• 1 tsp vanilla extract
• 1 cup crushed graham crackers (about 9 full sheets), plus more for garnish
• 1-2 cups sifted powdered sugar
• 1 cup mini marshmallows
• 6 oz. chocolate candy bark
• 6 oz. semi-sweet chocolate chips
• 2 Tbsp shortening (optional)

Directions

1. Line two baking sheets with waxed paper; set aside.
2. In a medium bowl, mix peanut butter, marshmallow creme, and vanilla. Add graham crackers and confectioners’ sugar 1/2 cup at a time. Cover and chill to set dough.
3. Using a tablespoon or small cookie dough scoop, scoop out dough and flatten it between the palm of your hands. Place a mini marshmallow in the center and then fold the dough over the marshmallow and roll into a 1-inch ball. Place on prepared pan, insert a wooden toothpick, and place in the freezer.
4. Melt chocolates (and shortening if using) together in a metal bowl over a pan of lightly simmering water (double boiler). Stir occasionally until smooth, and remove from heat.
5. Remove balls from freezer. Dip into melted chocolate leaving a small circle uncovered at the base of the toothpick. Return to wax paper, chocolate side down, and immediately sprinkle with graham cracker crumbs. Repeat with remaining balls.
6. Refrigerate for 30 minutes or until set. Remove toothpicks and if desired, carefully smudge the holes left behind with fingertip.

If you’ve followed my blog long enough, you know that every season for college football I share a different peanut butter and chocolate recipe on Saturday game days aka #PBchocSat. Not all recipes I share include actual buckeyes, or even look like buckeyes, they just have to include peanut butter and chocolate inspired by them.

That being said, in preparation for the first game a week from today against Minnesota I rounded up over 40 recipes that either include buckeye candies in the recipes themselves or the finished product looks like a buckeye. Which means even though I have even more recipes that have “buckeye” in the name, if they didn’t meet those criteria they weren’t added. I also snagged a few from some food blogger friends to spread the love.

I realize I dominate this list quite a bit. To be honest I was surprised I didn’t find more from others but I guess I am a special breed of fan when it comes to buckeye recipe creations. Well, Ohio State is playing in the Big Ten Conference Championship today against Northwestern! And if all goes well, despite only playing half a season’s worth of games we may still somehow make it into the College Football Playoffs. Here’s hoping our talent outweighs our shorter playing time.

Whatever keeps the #PBchocSat coming, amiright?

I know I already shared a buckeye hot chocolate a couple weeks ago, but that one was spiked with peanut butter whiskey. These babies deserve their own spotlight if only because hot chocolate bombs are all over the place this season.

I am not entirely sure who started this trend, but I think they missed out on a marketing opportunity. But businesses everywhere are thankful as people rush in to purchase their own. 

These bombs are hollow chocolate shells filled with hot chocolate powder and marshmallows. Of course all kinds of varieties have popped up across the internet, I’ve even seen snowmen and a Grinch version! For more detailed instructions, check out one of theses tutorials on how to make hot chocolate bombs or other flavor ideas.

I actually was resisting the trend until the idea popped into my head to make one that looks like a buckeye! All bets were off at that point. The only rate limiting step was acquiring the silicone molds. Trust me I would have posted these a lot sooner if I could have.

While silicone semi sphere molds give you that nice round shape and are easy to work with, you could really use any shape. I’ve even seen some make with cupcake pans (although I don’t relish the idea of getting the chocolate out of a solid mold).

To make these a buckeye hot chocolate bomb, I simple had to add a dot of melted peanut butter chips before coating them with chocolate. Then all that’s left is to fill with hot cocoa powder, powdered peanut butter, and marshmallows. Place it in a mug, pour over hot milk, and watch the magic happen.

BUCKEYE HOT CHOCOLATE BOMBS

Yield: 9 servings Prep Time: 30 Minutes

Nutrition facts: 200 calories 20 grams fat

Ingredients

• Three Large 6-Cavity Semi Sphere Silicone Molds
• 2 oz. peanut butter chips
• 16 oz. good semisweet chocolate, chopped
• 9 Tbsp dry hot cocoa mix
• 9 tsp powdered peanut butter
• 54 mini marshmallows (about 1/2 cup)
• Hot milk for serving

Directions

1. Melt the peanut butter chips by microwaving at 50% power in a bowl, stirring every 15 seconds until the chips are all melted, about 1-2 minutes.
2. Use a small spoon to dollop the melted peanut butter chips in the center of half the sphere molds, creating the "eye" of the buckeye. Place in fridge for 5 minutes, or until set.
3. Melt the dark chocolate in a double boiler over barely simmering water (or microwave as in step 1). Use a spoon to dollop the melted chocolate into every mold, smoothing it around the edges until everything is covered (a pastry brush helps). Place in fridge for 5 minutes, or until set. Repeat 1-2x until all but a couple tablespoons of melted chocolate remains*.
4. Carefully remove chocolate shells from the molds. Fill half of the shells with 1 tablespoon cocoa powder, 1 teaspoon powdered peanut butter, and 6 marshmallows. Brush the open-side edge of an empty chocolate shell with remaining melted chocolate and carefully press to seal over a filled shell. Gently wipe away excess chocolate with a gloved hand or pastry brush. Place in fridge to set and store until ready to serve.
5. To serve, place in a mug and pour 8 ounces of hot milk over the bomb, stirring once it breaks open until completely melted.

*This is to ensure your bombs are thick enough to hold their shape and not fall apart.

After a sudden week off last weekend due to high COVID cases amongst the football team/staff, apparently the Ohio State Buckeyes are back at it today at noon playing at Michigan State. It feels so weird to have regular season games past Thanksgiving weekend. Heck I had barely adjusted to having a game on Thanksgiving weekend and it’s been 9 years.

But I digress. Other than cookies I have not been overly motivated to cook lately so for todays #PBchocSat I went with an easy peasy boozy buckeye hot chocolate made to look fancy thanks to these double walled glasses. Extra points because it’s freaking cold out and I don’t want to leave my blanket cocoon.

I made this with my homemade hot cocoa mix, powdered peanut butter, and Skrewball peanut butter whiskey, but you could also make it with my homemade peanut butter hot cocoa mix! Or skip the extra peanut butter if for some reason you think the peanut butter flavor in the whiskey is enough. I personally don’t think there is ever enough peanut butter.

Don’t forget the whipped cream and buckeye for garnish!

• 8 oz. milk
• 1/4 cup dry hot chocolate mix
• 1 tsp powdered peanut butter*
• 1.5 oz. peanut butter whiskey, such as Skrewball
• Whipped cream, buckeyes, and sprinkles for garnish

Directions

1. In a medium coffee mug, heat milk in microwave for 1 minute or until it just starts to bubble.
2. Add hot chocolate mix, powdered peanut butter, and whiskey. Stir until combined.
3. Garnish with whipped cream, a buckeye candy, and sprinkles if desired. Serve immedaitely.

Notes

* Or 1 tsp regular creamy peanut butter
