Interesting, I've never heard of corn extract before but I definitely need to give this one a try! Thanks again for being so creative with your oats using inspiration from my cookies! It's such a fun idea.

Reporting back on my experiment. These overnight oats turned out very well, and my husband liked them. Recipe was ½ cup rolled oats, 1T chia seeds, 2T collagen powder (14g protein per T), 1T brown sugar, ½ t corn extract, ½ cup milk, ¼ cup heavy cream, and ½ cup blueberries. I'm giving serious consideration to ordering some freeze-dried corn powder - it would be better than the extract. I would use 1 to 1.5T of that in place of the extract. In looking through my recipes I realized I've gotten 3 new overnight oats recipes from your cookies. Quite a bounty!

I'm trying to figure out if these would make overnight oats that my husband would eat. They would be a lot simpler than your cookies, but I'm not sure how he feels about corn for breakfast. He didn't like a savory cottage cheese bowl with cucumber for breakfast. But I can try at least once, because I can't predict what he would like.

People don't' realize how much science goes into baking cookies. And not just macaron! Oddly enough, I have freeze-fried corn in the pantry! I see these going in the oven in the near future.

[…] Other than berries and ice cream, what’s more summer than sweet corn? I eat so much of it (mostly grilled with the husks still on) in the summer because it’s like peaches, they are only this good for a short period of time! (Although speaking of berries I have also made these corn cookies with blueberries!) […]
