Hi Chris, unfortunately I made these 2 years ago and cannot recall exactly what was the consistency of the batter. Did you make sure to use a small egg? If you used a larger egg that could be why the batter was runnier. As for the muffins rising, do you know how old your baking soda is? That is often the culprit. For best results, replace every 3-6 months after opening. But as you can see from my photos, with the jammy centers these muffins wont rise too high.

Hi Erin,
The muffin batter came out very runny. Is it supposed to be?
My muffins didn't rise very well either. I think that was because of the batter consistency.
Thoughts?
Thanks,
Chris

I hope you enjoy these muffins once figs are back in season.

Thank you, his absence is still very much palpable :-(

Yum!! These sound like they are easily adaptable to my diet, although they'd still be a bit more carby than my usual. I like doing the figs from scratch. I'll have to wait for fresh fig season, but I would love to try these. And I'm very sorry to hear that you lost your special cat. Some cats, like the one I married when I married my husband are just not forgettable, even after 14 years.

Haha not specifically me intentionally, ad placement is based off or your internet history, which makes sense that it would show that for you!
