If I could I would do it with all purple potatoes, because, color aside, they taste the best. My local Sprouts says they are seasonal (fall, winter), but funny how they are available in the mixes all year long. I’m dying laughing at this. So funny, but so true! I had a hard time refraining from snapping pics of all of my dishes for our celebration yesterday too. I think this recipe sounds fantastic! Tri-colored potatoes are my jam right now. Can’t wait to try, thanks for sharing!!
