When I cook with wine I generally use a wine I already enjoy to drink. I would not advise using red wine vinegar as it will change the flavor. But if you like a stronger vinegar flavor then that's up to you!

Hi Liz, good question! Unfortunately I have not done this myself but according to a few forums, you do not need to significantly increase the cooking time for multiple roasts as long as they are the same size (which yours is) and have space for air to circulate around them (if they don't have similar spacing to the photos of mine then it may take longer). The cooking time is mostly determined by the thickness of the roast, not the quantity, but please be sure to check the internal temperature with a meat thermometer to ensure it is done. If you do execute this, please report back!

What if I'm cooking three 3 lb roasts in a huge (15.5 qt) dutch oven? Any estimate on how long that would take at 300F?

No problem! Yes add enough to cover everything, including the meat. As for the veggies, they are root vegetables so they will be softer but they still hold their shape.

Thanks for sharing! I'm going to give this a try. Could you please clarify one thing for me? When you say, "add the rest of the ingredients and enough water just to cover," do you mean enough water to just cover the vegetables, or do you actually add enough to cover the meat? Also, do the veggies get soggy after roasting for three hours? Thank you!
