I definitely have to try this one: anyone living in El Paso should definitely be eating the Mexican version of eggs Benedict. I’m glad to see that you only put ¼ t of chipotle in – that stuff is really potent (as I’ve learned the hard way). I think this would be nice with asparagus for dinner. :-)
