I’ve finally made this twice recently. We are no longer good with eating peanuts, so I tried almond butter and almonds with the salad the first time, and tonight I used cashew butter and cashews. My husband likes both versions, but for me the cashew butter gives a much more flavorful dressing. Definitely a keeper recipe.

For what it’s worth, my gym has been less than packed this January…apparently no one in NYC made resolutions! I resolve to eat more peanut butter, though (as if that’s possible)…this salad is HAPPENING.

I am kind of liking the fact that your kitchen is not yet situated for baking – you are posting recipes like this one that I am far more likely to make. I love Thai food and peanut dressing is the best. Looking forward to enjoying making this.
