The chicken was very nice - we enjoyed it. However, I think it would have been better fresh out of the oven. When I mentioned that to my husband, he was very glad to hear that I had more nectarines (the peaches we get here are awful). He wants me to make it again. I served it with steamed green beans, with the balsamic drizzle over all. A very satisfying recipe, indeed!

Erin, I fixed this tonight, but wasn't smart enough to figure out that I needed to cook it longer for two people… It smells wonderful, though. As part of our substitute dinner we had beer. I wish we'd been able to have the chicken because one of the beers we tried would go so perfectly with it. If you like beer, it is Clown Shoes Chocolate Sombrero (a chocolate stout). Even if you are not a stout drinker, this one would be perfect with this chicken. Oh, what could have been… I'm really looking forward to having the chicken tomorrow night. My husband smelled it and thought it smelled divine - and he almost NEVER does that. The only other time I heard him say anything like that was about the pizza at Snake River Brewing Co. in Jackson Hole WY, when he said he thought he'd died and gone to heaven. First time I ever heard him be effusive about any food. So your chicken is the second one he has been excited about, and he hasn't even tasted it yet. Good on ya' (to quote Aussies)! We are really excited about tasting it tomorrow evening. Since I'm sure we're going to like it, I congratulate you on a great recipe. (BTW, I was just looking at your recipe list and didn't realize you had so many savory recipes. I'll be checking them out.)
