Hi Lily, I am glad you enjoyed them despite the sunken middles! I haven’t heard from anyone else having this problem (or at least they haven’t spoken up about it) so I am not sure what that could be. Some ideas: (1) make sure your baking powder isn’t old and lost activity, thus resulting in a weaker rise, (2) did you use margarita powdered mix or liquid? I should have been more specific as I used liquid and if you used powdered that could possibly offset things (I typed the opposite when I first replied so pardon the change). I will fix that now just in case!
