250 seems really low and I’m afraid to try it that low since i usually use more like 325-350 on my electric griddle. Could you confirm?

In reply to rachel. I am not entirely sure as I have not tried it myself, but I think they could. You would have to keep an eye on them in the oven and make sure to test with a toothpick to know when they are done. If you try it let me know!

These are fabulous! We love pancake recipes and I’ll definitely have to give this a try! BTW- we still love, love, love your oatmeal pancakes. We just made them the other day, so I’m sure these will be a hit too! :)

In reply to Amy C.. Totally! Remove the xanthan gum, or just click on the link for How Sweet It Is's version. I don't eat gluten-free either but my friend Christina cannot have gluten, so I had to cook these special for her over the weekend. You really cannot tell they are gluten-free though!
