Guest posting on The Spiffy Cookie today is Jessica from Bake a Little! I was very excited when she told me she had a killer Nutella cookie recipe that she wanted to share. Here goes!

Hi guys! Jessica from Bakealittle here!

I am guest posting today and I could not be more excited! As those of you who read Bakealittle know, baking is my jam. My dream is to have an endless supply of baking goodies. I am obsessed to the extent that if I were on a deserted island I would bring flour, sugar, and butter so I could make cookies on a rock under the burning sun.

Today I have a great recipe to share with you for some delish Chocotella Cookies. I always enjoyed Nutella, a little on a banana, a Nutella Crepe when I was abroad but nothing compare to Nutella in the form of a cookie. So easy to make, just a few ingredients and ooey gooey to perfection. They are definitely lock-your-snack-cabinet-and-give-your-roommate-the-key kind of good. Nothing hits the spot more than biting into a scrumptious Nutella Cookie and realizing there is even more chocolately goodness inside. Wow- making myself hungry over here!

Ingredients:

1-1/3 cup all-purpose flour

1 Tbsp unsweetened cocoa powder

Sprinkled ground cinnamon

1/4 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

7 Tbsp unsalted butter at room temperature

2/3 cup granulated sugar

1/2 cup light brown sugar

2/3 cup Nutella

1/2 tsp vanilla extract

1-1/2 egg whites

3/4 cup semisweet chocolate chips

Directions:

  1. Combine flour, cocoa powder, cinnamon, baking soda, baking powder, and salt in a medium size bowl and set aside.
  2. With an electric mixer combine butter, brown sugar and granulated sugar until the mixture is light and fluffy.
  3. Add Nutella, egg whites and vanilla to the sugar mixture with the electric mixer.
  4. Add the flour mixture slowly to the sugar mixture.
  5. Mix in chocolate chips until fully incorporated.
  6. Place mixture in the fridge for 45min-1hr to let chill- (This really makes them extra special delish!).
  7. Place tablespoon size circles on a pam-ed, tinfoil-ed pan about 2 inches apart and bake at 350 degrees F for 7 to 10 minutes- makes about 32 cookies.
  8. Remove, let cool and dig in!

(If you need a friend to hold that key for you- I am your girl :-))
Enjoy!

Belatedly, these look incredible! I, too, have only the fondest memories of the Nutella crepes I consumed during my semester abroad. And Jessica, your blog is so great! I will definitely be stopping by frequently to check it out. Thanks for sharing!
