No bake granola bars are incredibly versatile. Try this gluten-free version with almond butter, dried cherries, and roasted pistachios
Holy freaking September where did you come from? Thankfully with the help of Bob, Christina, and Dave the end of August was not overlooked. We hillbilly mini golfed, saw thousands of salt and pepper shakers, wine/moonshine tasted, hiked to the tallest waterfall in the Smokies, saw a folk-rock band, grilled and just had a good time. Alas the arrival of September meant they had to return to their respective states today.
Accompanying us on this adventure were these gluten-free granola bars which came in handy on the hike. Just like the base for my favorite chocolate chip cookies, the base for these granola bars allows for all kinds of flavor options. This time I made them with almond butter, dried cherries, and roasted pistachios.

Looking for an Easter dessert? This cute Easter bunny cake is easily constructed with two round cakes. The best part is that it’s a no-bake cake made out of rice krispies treats.
Baking for the holidays is always a lot of fun. Beyond an excuse to use festive sprinkles, there are so many creative ideas. Take this cake for example – two round cakes magically transform into this cute little guy. Unfortunately my photo-shoot for this Easter creation was not conducive to great pictures, but the execution is what’s important here. It’s an Easter bunny cake!
First things first, this is a no-bake cake. I made a cake out of rice krispies treats which were formed in cake pans. Using a simple template I cut up one of the cakes into the ears and bowtie to create the bunny. From there all that remained was to frost and decorate! You can use any assortment of candy, sprinkles, and frosting that you prefer. I made the eyes out of leftover cakeball fondant and white and black frosting, the cheeks are pink sprinkles, the nose is more cakeball fondant, the mouth is black frosting, and finally the bowtie consists of a chocolate chip cookie, cakeball fondant and sprinkles. Coconut would also be a great way to make a “fluffy” bunny but I made this cake for a non-coconut lover.
Get your rice krispies treat fix with this single serving recipe. Make it your own with your preferred nut-butter and mix ins. I chose white chocolate peanut butter and peanut butter cups!
How many of you have already dug into the Easter candy? The holiday-shaped Reese’s are always my weakness, with their superior peanut butter to chocolate ratios. Just when I thought the temptation could not get any stronger, Reese’s coated these beautiful creations with white chocolate. There’s nothing I love more than PB+Choc than PB+WChoc, which lead to the birth of this rice krispies treat with a double dose of PB+WChoc. And it’s all mine!
Whip up this single serving white chocolate peanut butter rice krispie treat with a hidden white chocolate Reese’s cup in the middle and you will be the happiest person around, assuming you also love PB+WChoc – if not change it up to your preferences! It just might cause you to forget all about your imploded March Madness bracket. (Although I did win in both groups I entered upon Florida’s loss, despite Wisconsin’s loss whom I picked to win it all.)
Three years ago: Spicy Mac and Cheese
SINGLE SERVING WHITE CHOCOLATE PEANUT BUTTER RICE KRISPIES TREAT
1/2 Tbsp Peanut Butter & Co.’s White Chocolate Wonderful peanut butter
1/2 Tbsp unsalted butter
2/3 cup miniature marshmallows
3/4 cup Rice Krispies puffed rice cereal
1 white chocolate Reese’s peanut butter cup (I used the Egg shape)
- Lightly grease a small bowl or tupperware, set aside.
- In a small saucepan over medium heat, melt the peanut butter and butter. Add the marshmallows and stir until smooth. Mix in the cereal with a rubber spatula until evenly distributed.
- Press half the mixture into the prepared bowl. Place the Reese’s cup in the middle, top with remaining cereal mixture and press evenly. Allow to cool completely.
- Use a knife or small spatula to remove the treat. Enjoy!

Ohio State may not be playing a game this weekend, but here in Memphis I am still celebrating yet another PB+Choc Saturday in addition to continuing the celebration of Peanut Butter Lovers Month! Here in Memphis, everyone knows that Elvis’s favorite sandwich was peanut butter and banana. Today I am using PB Crave’s CoCo Bananas Peanut Butter to transform that sandwich into a rice krispie treat. The original recipe used banana chips as well, but I decided the banana flavor in the peanut butter was a adequate substitution. Although I will admit, I had planned on topping them off with banana chips but they mysteriously disappeared into the abyss that is my pantry (which means I probably used them and forgot). Regardless, you won’t want to miss out on these over-the-top krispie treats! One of my labmate’s eyes bulged out upon her first bite. Yea they’re good.
Who says ice cream is just for the summertime? I enjoy it year-round whether it be a homemade creation or from the grocery freezer. While attending Ohio State in Columbus, I became a lover of Graeter’s Ice Cream – particularly their peanut butter chocolate chip, blackberry chocolate chip, and Buckeye blitz ice creams. They also make festive specialty flavors such as pumpkin and the newly added salted caramel just in time for fall! Unfortunately I don’t live in Ohio anymore to stop by their stores first0hand but that didn’t stop them from sending me a supply of their ice cream! If you don’t live in Ohio, you can locate their ice cream by the pint at select grocery stores and online at graeters.com.
So what did I do with my ice cream treasures? Well first I sandwiched the salted caramel ice cream in between two chocolate chip cookies as an ice cream sandwich. Let me just say, the salted caramel ice cream is frozen gold! Sandwiching it between cookies was a fantastic and easy idea, and I bet it’d be great on brownies, and pies, but I have a feeling the rest will be devoured by spoons ;-). For the pumpkin I decided to get a little fancier and actually made something with it – a krispie dessert that resembles fried ice cream. Ever wanted to know what pumpkin pie would taste like in ice cream bar form? Well I think this might be it.
With all this dissertation writing I’ve been doing, I asked for some help from my foodie friends to help with some food blog writing as I have less and less time to dedicate to it. Even though the only other things I have to take care of besides me is a cat and a basil plant, it seems like I barely have time to take of the things I need to do on a daily basis. Which is why I am so impressed by people like Stephanie. Not only does she have a blog where she posts delicious recipes (such as chocolate peanut butter frozen pudding pie and quick and easy mongolian beef), but she also puts together work out routines, and organizes a baking exchange called Bakin’ Friends. Oh and I forgot to mention that most important thing – she’s a new mom! I don’t know how she does all and look after her little man but she really does rock. And today she’s guest posting with the perfect recipe for today’s Single Serving Sunday.

Two years ago: Petri Dish Cookies
Hi guys! My name is Steph and I blog over at Steph’s Bite By Bite. I am so excited to be guest posting today for Erin…girl has some school work to do! So I’m glad I could help ease some stress by sharing a scrumptious single serving treat with you today.
So, I recently became a new mom. My little man is now 4 ½ months old and things around my house are ca-razy [but in like the best, most funnest, good way, ever]. Being a stay at home mom means that I wear many hats. I am an entertainer, a maid, a doctor, a babysitter, a cook, a teacher, and a sleep institutor, just to name a few.
Now that I stay at home and spend lots of time with just me and the baby, I have moments where I want.need.crave a quick SWEET snack [you know, to boost my energy]. But don’t want to make something that is going to give me more than one serving, because for me, that means trouble. Too many cookies, candies, brownies laying around my house is never a good thing. And since I have like 5.6 minutes of non baby duties, not really, I have longer, but sometimes it seems that short, I don’t want to waste my precious “free time” on a recipe that takes an hour to put together.
They are the perfect little afternoon baby-meltdown mama pick me up. Ok, even if you’re not a mama, these little things will turn any bad day into a good day in no time! And they take mere minutes to make. Plus, like the title says, they require no sharing. Who doesn’t love that…wait…I’m supposed to be teaching my little guy how to share right…oh this is gonna be a problem.
