When it comes to making homemade pizza I’m all about homemade pizza dough, as made evident by the many different pizza dough recipes I have shared. It’s just too easy! In the time it takes my oven to preheat, the dough has risen. However, I have yet to try my hand at homemade crescent dough – now that intimidates me. So to make this festive pizza ring resembling a Christmas wreath I went ahead and bought 2 cans of refrigerated dough.

This Christmas wreath pizza ring would be a great idea for a holiday party. I brushed it with pesto to give it a green hue and cut the bottom of a bell pepper out to look like a red ribbon. Inside it’s stuffed with cheese, pizza sauce, and three meats: pepperoni, Italian sausage, and prosciutto. Place a bowl of pizza sauce in the middle and it’s ready for the table!

Chicken & Spinach Alfredo Pizza

Sometimes my pizza toppings are composed of a random array of things found while digging through the junkyard that is my refrigerator. Those pizzas don’t regularly manage to find their way onto this screen, but once in awhile I create something worth repeating beyond the realm of simply using up leftovers. With the amount of pizza eaten in my kitchen, one is bound to squeak out every once in awhile.

This is another one of my pasta-dish-gone-pizza recipes. The first was the Cajun Chicken Alfredo Pizza, inspired by none other than my Guiltless Cajun Chicken Alfredo. But instead of cajun seasoning and broccoli, you have spinach and pesto with your chicken alfredo pizza. Isn’t coming up with new pizzas fun? I remember when choosing between pepperoni or just cheese seemed like a difficult choice. Now the topping options are endless and I must try them all!!

One year ago: Cake batter Fruit Dip

CHICKEN & SPINACH ALFREDO PIZZA

Serves 2-3

Ingredients:

1 recipe thin-crust pizza dough

2 Tbsp basil pesto

1/2 cup Alfredo sauce

1/2 cup cooked shredded chicken

1 cup fresh spinach

1/2 cup Mozzarella, shredded

1/4 cup Parmesan, shredded

Directions:

  1. Preheat oven to 400 degrees with a pizza stone placed on the center rack for 15 minutes.
  2. On a cornmeal dusted pizza peel, roll out the pizza dough. Spread the pesto and Alfredo sauce over the dough within 1/2 inch of the edge. Top with chicken pieces, spinach and sprinkle cheeses over top.
  3. Shimmy off the pizza peel onto the preheated pizza stone and bake for 12-15 minutes or until crust is golden and cheese is bubbly.

Pizza Swirls

Do you ever make-up an idea for dinner spontaneously while starring at the contents of your fridge? Well that’s how these guys were created.

I have a very bad habit of not planning subsequent meals with leftover ingredients from another, which results in a fridge/freezer full of random things  and unfortunately find their way to the trash before I use them. Thankfully, every now and then I figure out a way to mesh some of them together into something super tasty (and sometimes it’s just “meh” and never shows it’s face on here).

On this occasion I brought together a leftover sheet of puff pastry, deli sliced salami, shredded Mozzarella, and homemade pizza sauce. All rolled together these created what would be an appetizer, but when you eat 10 of them in one sitting I am pretty sure it ends up being classified as dinner. But can you really blame me? Just look at their flaky loveliness!

One year ago: Caramelized Honey Dijon Chicken Wrap

PIZZA SWIRLS

Makes 20 pieces

Ingredients:

1/2 of a 17.3 oz. package of puff pasty sheets (1 sheet), thawed

1 egg

1 Tbsp water

1/2 cup Mozzarella, shredded

1/4 cup Parmesan, shredded

1/4 tsp dried oregano

1/8 tsp garlic powder

1/8 tsp crushed red pepper flakes

9 slices salami (or use pepperoni)

Pizza sauce, for dipping

Directions:

  1. Preheat oven to 400 degrees. Line two baking sheets with parchment paper, set aside.
  2. Beat egg and water in a small bowl. In a separate medium bowl, stir together the cheeses and seasonings.
  3. Unfold the pastry sheet on a lightly floured surface. Brush with egg mixture. Top with cheese mixture and then overlay the salami slices.
  4. Starting with the short side closest to you, roll up like a jelly roll. Cut into 20 quarter-inch pieces and place on baking sheets. Brush with egg mixture and bake for 15 minutes or until golden. Serve with pizza sauce.

Homemade Pizza Sauce

Do you have a favorite homemade pizza sauce recipe? Most of the time if I don’t buy it jarred, I will use a jar of pasta sauce instead and add a bit of seasoning. But when I found a homemade pizza sauce recipe I thought I would give it a try. With a great flavor that was simple and quick to prepare, I have reused this recipe a few times already. It’s also great for dipping!

One year ago: Peanut Butter Stuffed Chocolate Chip Cookies

HOMEMADE PIZZA SAUCE

Makes 3.5 cups

Ingredients:

1-15 oz. can tomato sauce

2-6 oz. cans tomato paste

2 Tbsp grated Parmesan cheese

2 tsp dried oregano

2 tsp garlic powder

1 tsp onion powder

1 tsp ground sweet paprika

2 tsp sugar

1/2 tsp salt

4 Tbsp olive oil

2 tsp white vinegar

Directions:

  1. In a large bowl or container, mix all ingredients.
  2. Store in an air-tight container in the refrigerator if not using immediately.
