Raspberry Tequila Sunrise 1

I am so excited to be a part of this year’s Brunch Week! There are so many great recipes this week which would be perfect for Mother’s Day brunch or any brunch throughout the year. Today is not only the beginning of Brunch Week but also Cinco de Mayo! This combination lead to the decision to make an alcoholic beverage with orange juice to cover breakfast and tequila for the Mexican flair. Obviously I am talking about a tequila sunrise, but instead of using grenadine I mashed up some fresh raspberries using my OXO muddler which created red portion of the sunrise. Brunch just got a whole lot sweeter! And although this recipe is written for one drink, I trust that even when tipsy you will be able to do the math to mix up multiples if necessary.

Orange-Vanilla Greek Yogurt Fruit Dip

Remember the peanut butter Greek yogurt fruit dip? Well I made another dip for the fruit-dipping-lovers out there! The reason why I bring up the peanut butter one is because I made both of these dips at the same time as evident by the same fruit skewers in the background. I actually made these dips months ago when my cousin Alex got married. Which happened in early fall. Makes you wonder why I waited so long to post them. I could make up all kinds of excuses but in reality I just totally forgot about them. The pictures were on an old memory card and I was distracted by my fancy new camera with it’s brand new memory card. Thankfully old pictures don’t get stale or moldy…

…dang, I really know how to make you crave this dip.

Orange Creamsicle Cupcakes

I wish all lotions, soaps, etc came in bottles that did not use pumps or wands. Why? Because they NEVER reach all the way to the bottom, forcing you to either throw away several uses of perfectly good product, or feel like a penny-pincher for trying to scrape out every last bit. I fall into the latter category and I am not ashamed. I bought the stuff and you better believe I am going to use every last drop that I can get. People say that when I am no longer living on a grad student stipend, my time and effort won’t be worth it anymore but I disagree. It’s less about the money and more about the fact that I don’t like to waste things. This is true of food items as well, as I am constantly finding ways to use up leftover ingredients from a recipe that did not use it all. I call it resourceful.

Anyway, that rant has little to do with these cupcakes although the heavy cream I used for the frosting was leftover from all my ice cream adventures last week. I made these cupcakes for Beth’s non-baby shower themed lunch (she’s not into the whole baby shower/gift opening thing even though she’s about to pop). When I asked what flavor cupcakes she was craving she said orange or something tropical, but nothing fancy. Well you know I can’t make a cupcake and not make it a least a little special, so I made orange creamsicle cupcakes with a swirl of two different frostings on top: orange and vanilla buttercreams. And in case the flavor wasn’t obvious enough I topped them off with orange gummies.

Beermosa

Hope everyone enjoyed a labor-free weekend! Or at least a reduced amount of labor. I certainly took advantage of some lazy-time on Saturday, watching every college football game I could find on TV starting with my Buckeyes at 11 am.

I am so glad college football is back in season. And to celebrate I kicked off the day with a beermosa. Initially I thought it sounded really gross to mix beer with liquor, and then orange juice. But don’t knock it until you try it! I was pleasantly surprised by this beverage, and it may be a staple for every 11am game. It’s the mimosa for football fans!

BEERMOSA

Serves one

Ingredients:

2 oz orange flavored vodka

6 oz light beer, of your choice

4 oz orange juice

Directions:

  1. Pour vodka into a large glass, followed by beer and then orange juice. Stir and enjoy!
