This classic Southern chess pie is ready for fall (and Thanksgiving!) with the simple addition of pumpkin.

Welcome to day 3 of #PumpkinWeek and my second recipe contribution to the pumpkin nation! Truth be told this will be the last pumpkin recipe from me, at least for this week – don’t freak out! These days I’m impressed if I post twice a week and it’ll be three by Saturday with my weekly #PBChocSat post so go me! By posting less I feel like I get to share recipes that pack more punch and I’m pretty proud of the recipes I am sharing for #PumpkinWeek.

Today I present to you a pumpkin version of a chess pie. It tastes and looks very much like a traditional pumpkin pie but it’s less creamy due to a lack of milk and instead a bit gooier (it is a custard pie after all). I also liked that the pumpkin was able to tone down the sometimes overly sweet nature of a chess pie. What is a chess pie? While there are various theories to the origin of it’s name, being a Southern dessert I enjoy the theory that it could have come from a pronunciation of “It’s jes’ pie” (It’s just pie).

PUMPKIN CHESS PIE

Makes 1 pie, serves 12-16

Ingredients:

1 unbaked pie crust

3 eggs, separated

1-1/2 cups sugar

1/2 cup (1 stick) unsalted butter, melted

1/2 cup pumpkin puree

1 Tbsp white vinegar

1-1/2 tsp vanilla extract

1 tsp ground cinnamon*

1/2 tsp ground ginger*

1/2 tsp ground allspice*

Directions:

  1. Preheat oven to 350 degrees. Place crust in a pie pan and crimp edges. Set aside.
  2. In a medium bowl, beat egg whites until stiff peaks form. Set aside.
  3. In a large bowl, whisk together the egg yolks, sugar, melted butter, pumpkin, vinegar, vanilla, and spices until blended. Gently fold in egg whites.
  4. Pour mixture into the pie crust and bake on bottom rack for 30-35 minutes, or until knife inserted in the center comes out clean and is browned on top.

*Or 2 tsp pumpkin pie spice

Haha take that with a grain of salt cause it appears no one truly knows the exact origin of the name. There are a few stories, I just enjoy that one most!

I love this idea! I just made a chocolate chess a couple weeks ago – love the idea of a slightly less sweet pumpkin version! That gooey texture on these pies is lovely.

I’ve never had a chocolate chess pie, but I have made a peanut butter before with chocolate chips and a chocolate crust! Also have done Meyer lemon. Honestly I’ve never made the standard version haha.
