No-Bake Oreo Ice Cream Pie

No-bake crust and a no-churn, customizable ice cream filling – what more could you ask for? How about Oreos!?

No-Bake Oreo Ice Cream Pie 3

Happy National Ice Cream Pie Day! This baby is as easy as it gets with a no-bake crust and a no-churn filling. As a bonus you can customize the filling easily but I went with Oreo. Mostly because my boyfriend requested an Oreo dessert for his birthday which passed recently. I suppose that’s good enough reason to make him something ;-).

NO-BAKE OREO ICE CREAM PIE

Makes 1 pie

Ingredients:

CRUST

16 Oreo cookies, finely crushed

3 Tbsp unsalted butter, melted

FILLING

1 cup (1/2 pint) heavy cream

1/2 cup canned sweetened condensed milk

12 Oreo cookies, chopped

4 Oreo cookies, halved for garnish (optional)

Directions:

  1. For the crust: In a medium bowl, stir the cookie crumbs and melted butter together with a fork. Press crumbs into the bottom and up the sides of a 9-inch greased pie plate. Chill for 30 minutes before filling.
  2. For the filling: In a cold, medium bowl, whip the heavy cream until stiff peaks form. Gently fold in the sweetened condensed milk and Oreos.
  3. Spread the filling evenly into the chilled crust. Freeze until very firm, at least 5 hours.
  4. Allow to sit at room temperature for 10 minutes before slicing and serving. Top with Oreos if desired.
