S’mores Lucky 7-Layer Bars

With 7-layer bars like these, everyone will be after your lucky charms. Made with a graham cracker crust, white and semisweet chocolate, coconut, marshmallows, marshmallow cereal, and sweetened condensed milk.

I almost forgot that there was still time to squeeze in one last St. Patrick’s Day recipe. After hosting my Pot Luck o’ the Irish party this past weekend (in all it’s potato-licious glory) I felt like St. Patrick’s Day already happened! But here we are, the day before that actual holiday, which means last night I spazzed out and made these bars for you. Originally I had planned on making a different flavor of 7-layer bars for an Easter sponsored post, but alas I could not find the specific product required. That’s the second time this month that’s happened to me! Annoying, but I digress…

I thought these 7-layer bars were perfect for St. Patrick’s Day, if only in the name. I mean come on, lucky 7? All I had to do was throw in some marshmallow cereal to seal the deal, in addition to the layers of graham cracker crust, white chocolate, semisweet chocolate, coconut, marshmallows, and sweetened condensed milk. They are also crazy easy to throw together so if you need a last minute treat for tomorrow, these are a winner.

S’MORES LUCKY 7-LAYER BARS

Makes 24 bars

Ingredients:

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1 cup white chocolate chips

1 cup semisweet chocolate chips

1 cup shredded coconut

1 cup mini marshmallows

1 cup frosted cereal with marshmallows (such as Lucky Charms)

1 can sweetened condensed milk

Directions:

  1. Preheat oven to 350 degrees. Line a 9×13-inch pan with parchment paper and spray with cooking spray.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press evenly into the bottom of prepared pan.
  3. Sprinkle white chocolate chips, semisweet chocolate chips, coconut, marshmallows and cereal over the top. Pour sweetened condensed milk evenly over the top of the bars.
  4. Bake for about 25 minutes, until they get golden around the edges. Cool completely before slicing into bars.
