Cocoa Candied Bacon

Don’t let looks deceive you, this is not burnt bacon. It is in fact cocoa candied bacon here to blow your mind!

Doesn’t that look appetizing? Burnt bacon is everything you’ve always dreamed of, right!? No? Well that is unfortunate… but guess what it’s not burnt bacon, it’s cocoa candied bacon!! Huzzah! I feel like this should have been an April Fools recipe but instead it is another contribution to #Choctoberfest.

Making cocoa candied bacon is pretty simple: give it a good rub down with a mixture of cocoa powder and brown sugar, place on a wire rack placed over a rimmed cookie sheet, and bake until crisp. And then I would suggest serving them with a side of hot peanut butter pancakes. Yes you read that correctly, bacon with a side of pancakes.

One year ago: Prosciutto-Wrapped Chicken with Balsamic Date Sauce

Two years ago: Apple Cinnamon Pretzels

Four years ago: Basil Butter

COCOA CANDIED BACON

Serves 4

Ingredients:

8 slices bacon

3 Tbsp brown sugar

1 Tbsp cocoa powder

Directions:

  1. Preheat oven to 375 degrees. Lay a wire rack on top of a foil-lined baking sheet.
  2. In a large shallow bowl, mix sugar and cocoa. Dredge bacon slices through the mix, lightly patting the sugar on top.
  3. Lay strips on wire rack and bake for 25-30 minutes or until desired doness, flipping the bacon once halfway through.
  4. Remove and drain on paper towels for 1 minute. Serve immediately.

Complete breakfast sounds like this bacon with your whole wheat chocolate chip peanut butter pancakes… And (are you ready for this? am I ready for it?) MY NON-BACON-EATING HUSBAND IS WILLING TO TRY THIS!!!!!! Oh happy day!

He liked it!! And so did I. A lot. The only thing we didn’t like was cleaning up our baking pan, so next time I’ll make sure to put down parchment or foil on the baking sheet before putting the whole mess into the oven. You’d think that after cooking for more than 50 years I would have figured that one out beforehand…
