Breakfast Grilled Cheese

Start your day with grilled cheese stuffed with eggs, bacon, cream cheese and cheddar cheese cooked right in a waffle iron.

Grilled cheese month is nearing it’s end and I somehow have only managed to post one grilled cheese recipe so far. To remedy this I decided to start my day with a breakfast version of grilled cheese cooked right in a waffle iron. This grilled cheese is stuffed with some of my favorite breakfast items such as cream cheese, bacon, eggs, and a cheddar cheese from Cabot seasoning with everything bagel seasoning. It’s pretty much the most amazing thing that ever happened to cheese.

Four years ago: Bacon-Corn Fritters

BREAKFAST GRILLED CHEESE

Serves 1

Ingredients:

2 slices of bacon, cut in half

2 eggs, lightly beaten

1 Tbsp milk

Salt and pepper, to taste

2 slices bread

1/2 Tbsp unsalted butter

2 Tbsp (1 oz.) cream cheese, room temperature

1 oz. Cabot everything bagel cheddar cheese (or white cheddar and a sprinkle of everything bagel seasoning)

Directions:

  1. Add bacon slices to a cold medium skillet. Set over medium-high heat and cook until crispy, flipping halfway through. Remove to a paper towel-lined plate and set aside. Drain all but 1 teaspoon of the oil and place back on heat, lowering to medium.
  2. In a medium bowl the beat eggs, milk, salt and pepper until blended. Pour into skillet. As the eggs begin to set, gently pull them across the pan with a spatula, forming large curds. Continue cooking while pulling and folding the eggs until thickened no and visible liquid egg remains. Remove from the pan, and set aside.
  3. Preheat waffle iron. (Or clean out the skillet and return to medium heat.)
  4. Spread butter evenly on one side of each slice of bread. On the opposite side of one, spread the cream cheese. Place this slice on the waffle iron, butter side down. Top with bacon, eggs, and cheese. Cover with the remaining bread slices, butter side up. Close the waffle iron and cook until browned and the cheese has melted. (Or cook one side at a time on the skillet.)

Love the concept of a grilled cheese breakfast sandwich! My favorite breakfast foods all melted together in one meal :) YUM!
