Homemade Pistachio Butter

If you’ve ever made your own homemade nut butter, then you should try pistachio butter. Everything you love about pistachios now in a spreadable form.

Are you ready to put $20 in your food processor and get excited about it? Then let’s make some roasted pistachio butter! I ground up nearly a pound of roasted pistachios, which are not cheap, in order to make homemade pistachio butter. All in the effort to help you eat as much green food as possible in celebration of St. Patrick’s Day. It’s more of a brown-green, but close enough.

HOMEMADE PISTACHIO BUTTER

Makes approximately 1.5 cups

Ingredients:

12 oz. shelled pistachios, roasted and lightly salted (about 2 cups)

Salt, to taste

Directions:

  1. Place pistachios in a food processor and grind for 15 minutes, stopping regularly to scrape down the sides. It will get thick but keep going, after about 15 minutes the pistachios will turn smooth and creamy. Add salt to taste and blend. Keep in an airtight container in the refrigerator.

bahahahaaaa most expensive nut butter ever! (probs not true-it would require some gold leaf for that distinction ;P) it looks totally worth it though!

Yet another brilliant idea from the Spiffy Cookie! I make my own nut butters all the time – almond, peanut, coconut. Haven’t gotten around to cashew or walnut yet. Pistachios are one of my very favorite nuts, so I’m not certain why I never thought of making butter from them. Possibly because I generally don’t keep them in the house. Just happen to have some now, so I’ll have to try this. You know you’re a bad influence on me, right? :-D

I love pistachios, so I’m sure pistachio butter would be amazing. Please tell me you bought pre-shelled pistachios though! I can’t imagine peeling a pound of them! :)

I was just shelling pistachios the other day and it took forever because many of those shelled I ended up eating! Mmmm…like the sound of pistachio butter. Pinning this and will try it to use for a macaron filling! :)
