The Bee’s Knees Peanut Butter Pie & Blogiversary Giveaway

It seems incredibly fitting that November is Peanut Butter Lovers Month because my blogiversary just so happens to also be in November, specifically today! I cannot believe I have been doing this for 3 whole years now and Peanut Butter & Co. is helping me celebrate with a giveaway for their Total Nut Case gift assortment. After all, I am definitely a “total nut case” for peanut butter and I know many of you are as well!

But first, let’s talk about favorite peanut butter recipes. As you know I have many, but one recipe that I revisit most in my dreams is peanut butter pie. I’ve made pretzel, cookie dough-s’more, chocolate chip-layered, funfetti-layered, and cookies and cream peanut butter pie varieties. Today I am adding another to the list – The Bee’s Knees using none other than Peanut Butter & Co.’s Bee’s Knees peanut butter. With a homemade graham cracker crust, a fluffy honey-peanut butter filling, topped with more whipped cream and a chocolate honey drizzle, I’d say this is one heck of a pie for a celebration! Don’t forget the sprinkles ;-).

THE BEE’S KNEES PEANUT BUTTER PIE

Serves 10-12

Ingredients:

CRUST

1-3/4 cups graham cracker crumbs

3 Tbsp brown sugar

6 Tbsp unsalted butter, melted

Pinch of salt

FILLING

1 cup Peanut Butter & Co.’s The Bee’s Knees peanut butter (or 3/4 cup regular + 1/4 cup honey)

1 (8 oz.) package cream cheese, softened

1/2 cup brown sugar

2 cups heavy cream

1 tsp vanilla extract

TOPPING

2 Tbsp chocolate honey (or chocolate syrup)

Directions:

  1. Preheat oven to 350 degrees. Combine the graham cracker crumbs, brown sugar and salt in a medium bowl. Add the butter and toss with a fork until all of the crumbs are moistened. Press into the bottom and up the sides of a 9-inch pie plate. Refrigerate for 15 minutes, then bake until set, about 8-10 minutes. Transfer to a wire rack to cool completely *.
  2. In a large bowl, beat together peanut butter, cream cheese, brown sugar and vanilla with an electric mixer on medium, until well combined.
  3. In another large bow, whip the heavy cream on medium-high until soft peaks form *. Using a rubber spatula, gently fold in 3/4 of the whipped cream until thoroughly combined. Spoon mixture into cooled pie shell and smooth mixture to edges of pie.
  4. Spread remaining whipped cream over the pie and drizzle with honey.
  5. Refrigerate until ready to serve.

* For a shortcut, use a prepared graham cracker crust and a 12 oz. container of thawed whipped topping.

** To make lighter, use reduced fat cream cheese and lite whipped topping.

A local grocer had 40oz jars of peanut butter for $1.98, so we bought a few dozen jars. We have made several varieties of peanut butter cookies, some with chocolate chips, some with m&ms, some with craisins(pb and j flavored). They all turned out great.

My personal favorite peanut butter recipe is peanut butter buckeyes. Not much of a recipe, I know, but so delicious! Every Christmas season I made peanut butter blossoms and they are always a hit. Especially since I use a mini Reese’s cup instead of a hershey’s kiss in each cookie :)

Favorite peanut butter recipe is definitely cooked peanut butter pie. It’s essentially peanut butter pudding in a graham crust with whipped cream on top. How can that ever be bad? :)

i make a super simple p.b. cookie alot. 1 cup p.b., 1/2 cup sugar, 1 egg, 1 teas. vanilla. that’s it, roll into bite size balls & bake at 350 for 8-10 min. they always stay soft & my grandkids adore them.

I don’t think it’s really a recipe, but honestly the best use of peanut butter is a sandwich: bread, peanut butter and a banana. I’ve made peanut butter bars, have had peanut butter cookies and oh the buckeyes! But the sandwich is where it’s at!

Your recipe sounds delicious–thanks for sharing! I’ve never heard of chocolate honey before.
I love a dessert called Peanut Butter Dream; unfortunately, it’s not something I have a recipe for (I buy it from a restaurant in Corvallis, OR).

My favorite Peanut Butter Pie recipe! My mother made this for years and now I make it as well, it is my go-to for occasions (or just for a delicious treat after a hard day!)
I personally use/make a gluten free crust, just because I have Celiac Disease.

1 (9-inch) refrigerated ready-to-use pie crust
3/4 cup(s) sugar
1/3 cup(s) cornstarch
1 teaspoon(s) salt
4 cup(s) whole milk
4 large egg yolks, lightly beaten
3/4 cup(s) peanut butter, preferably crunchy
3 tablespoon(s) butter, at room temperature
1 tablespoon(s) vanilla extract
Freshly whipped sweetened heavy cream, for serving
Chopped peanuts, for garnish

my husband makes these amazing peanut butter sandwich cookies. It is really just a standard peanut butter cookie recipe, but he mixes cream cheese, powdered sugar, and peanut butter to make this super rich and yummy filling. then he makes sandwich cookies from all of it.

My absolute favorite thing to do with peanut butter is make cookies with peanut butter M&Ms.
