Apple-Walnut Pancakes with Brown Sugar Greek Yogurt

I cannot recall if I mentioned this before, but September is Breakfast Month! You only have two days left to celebrate the most important meal of the day, so be sure to whip up these pancakes.

Using prepared whole-grain pancake mix, these pancakes are given a boost with chopped walnuts and are then topped with a brown sugar-Greek yogurt mixture and chopped apple. It’s a perfect single serving breakfast treat, but can be easily multiplied for more servings.

Apple-Walnut Pancakes with Brown Sugar Greek Yogurt

APPLE-WALNUT WHOLE GRAIN PANCAKES WITH BROWN SUGAR GREEK YOGURT

Serves 1

Ingredients:

1/4 cup whole-grain pancake mix

1 Tbsp chopped walnuts

1/4 cup nonfat vanilla Greek yogurt (I used Chobani)

1 tsp brown sugar

1/4 cup chopped apple

Directions:

  1. In a small bowl, mix pancake mix with water according to package directions. Stir in chopped walnuts.
  2. Heat a medium skillet over medium heat and coat with nonstick cooking spray. Pour batter into skillet to make two or three 5-inch pancakes; cook 2 minutes a side.
  3. Meanwhile, combine Greek yogurt with brown sugar. Top pancakes with yogurt mixture and chopped apple.
