Review: Prevention RD’s Everyday Healthy Cooking Cookbook & Giveaway

I interrupt today’s regularly scheduled Single Serving Sunday post with a celebration of the release of Nicole Morrissey’s cookbook, Prevention RD’s Everyday Healthy Cooking (Skyhorse Publishing). Complete with a giveaway of the cookbook to one lucky reader!

Nicole Morrissey is the blogger behind Prevention RD and is a registered dietician offering smart, sustainable solutions to healthy weight loss since she started her blog in 2009. She firmly believes that “an ounce of prevention is worth a pound of cure” and this motto is evident in her recipes. From healthier versions of mozzarella sticks and chicken tortilla soup, to creative recipes such as creamy chicken pesto enchiladas and carrot cake pancakes you’ll be satisfied while also being proactive about your health. There are even chapters dedicated to carb and dessert lovers

Surprisingly, the first recipe I tried was a side dish. I rarely make side dishes when I cook for myself, which is most of the time, but the roasted asparagus with balsamic tomatoes was a must-try. It was perfect served alongside a chicken breast topped with a Greek yogurt sauce (which I will share at a later time).

Being a carb lover, I also tried out the roasted red pepper and goat cheese pasta. I remember when she first posted this recipe on her blog and I immediately saved it. Unfortunately I save a lot of recipes on a daily basis and like most it was forgotten. Thankfully I rediscovered it in her cookbook. I love recipes that use few ingredients but pack a lot of flavor so this dish was perfect for me. The only thing I changed was pureeing two cloves of garlic into the sauce because I just love garlic.

Of course there are many more recipes that have been bookmarked throughout her book, but the priority goes to her crock port chicken tortilla soup. The only thing I miss in this cookbook is a recipe index in the back. But the introductions to each chapter do indicate the page numbers for each recipe.

My favorite healthy recipe is a bowl of bulgur with veggies and whatever else I happen to have. Maybe some beans or chicken sausage, add some cheese. It’s a great way to use up leftovers and get full at the same time!

Baked salmonwith some concoction I mix and put on top…what ever is in refrig. usually some sesame ginger marinade, horseradish, dijon mustard and reduced sodium soy sauce. Bake at 425 and then broiled at the end to get crisly!!!

Not sure if it’s my favorite, but just tonight we had a turkey meatloaf for dinner. For extra flavor and texture, I added a couple of finely shredded carrot to the mixture. It was really good.

My favorite healthy recipe is anything that allows me to eat local, organic and in season, when I can. So something with lots of veggies and chicken!

I found out after my last reply that we were supposed to mention our favorite healthy recipe. Right now it is the Apricot Mango Smoothie from the Prevention website. I’ve been doing it with nectarines in place of apricots and it is to die for good.

This sounds like a great book. And you had better share your chicken with yogurt sauce recipe!!!!!!! It sounds like something I would definitely make. I love being able to find so many healthy recipes.

I love a salad of grilled halloumi (cheese) served over a bed of mixed greens tossed with sliced straberries, olive oil, balsamic vinegar, salt, and pepper. So simple, yet so delicious.
