These berry frozen yogurt bars could be easier to make. With a chocolate graham cracker outside which softens when filled with the berry frozen yogurt filling.

Ice cream week is in full swing! In order to combat all the extra ice cream in my presence I have been drinking a lot more green monster smoothies for breakfast. Unfortunately the other morning I managed to knock my smoothie off the counter and it didn’t just spill onto the floor, it exploded and splattered all over my kitchen and into my dining room. Who knew smoothie cold fly so far? As a result I not only lost my breakfast but also had to fully clean my kitchen floor and surrounding walls/areas. I am still finding little flecks of green in places though.

But I digress. I thought I’d take a little break and share a slightly healthier ice cream treat for today’s post since I resorted to a less-healthy breakfast option after the smoothie incident (hello peanut butter poptarts). These bars are a fruity version of a traditional ice cream sandwich, but instead the cookie is a chocolate graham cracker and the filling is a berry frozen yogurt. It’s like chocolate covered fruit! One year ago: Pineapple Muffins with Coconut Streusel

Two yeas ago: Gnocchi with Goat Cheese, Grape Tomatoes and Basil

BERRY FROZEN YOGURT BARS

Makes 9 bars

Ingredients:

9 whole chocolate graham crackers, broken into 18 squares

1/2 cup frozen mixed berries, pureed

1 cup nonfat plain Greek yogurt (I used 0% Chobani)

1-1/2 cups thawed frozen reduced fat whipped topping

1 tsp vanilla extract

Directions:

      1. Line an 8-inch* square pan with wax paper, with ends extending over the sides. Arrange half the graham crackers (nine) on the bottom of the pan.
      2. In a medium bowl, stir together the pureed berries, yogurt, whipped topping and vanilla. Spread over graham crackers. Top with remaining graham crackers, aligning to match the placement of the crackers on the bottom layer.
      3. Freezer for 4 hours. Use the overhanging wax paper to remove from pan. Cut between crackers to form 9 square bars. Allow to thaw for just a couple minutes before serving. Store any leftovers wrapped in freezer.

*My graham crackers fit in an 8-inch square pan, but if yours are slightly bigger you may need to use a 9-inch pan. Check by simply placing crackers in the bottom.

You’re a genius to make these with chocolate grahams! I love it. And yeah, it’s TOTALLY just like chocolate-covered fruit…obviously. Practically a health food! :)

I had a smoothie disaster once before work. It was a mess and had no breakfast. The worst way to start the day. If I had all of your ice cream treats though I would just have called it quits and had one of these bars.

Ugh, there is almost nothing worse than having to clean flying food off of the walls of your house! And especially when it’s green :P These would definitely make me feel better – I love a homemade ice cream sandwich!

Erin, it did my heart good to read about your smoothie explosion (forgive me, please?) That’s the kind of thing my husband is really good at. Hopefully, unlike me, you won’t be finding the evidence months later…
