Not only is July ice cream month AND blueberry month, but today is National Ice Cream Day! To celebrate in combination with Single Serving Sunday, I made you a single serving blueberry cheesecake ice cream with only 4 ingredients and no ice cream maker! By freezing and blending up a frozen banana, you will get a creamy smooth ice cream base to then swirl in the cream cheese, blueberries and graham crackers. Want to make it for more than one? Just multiply the recipe by how many servings you need!
Two years ago: Broccoli Garbanzo Pasta
BLUEBERRY CHEESECAKE ICE CREAM
1 banana, sliced and frozen
1 oz cream cheese
1/4 cup blueberries (fresh or frozen)
2 graham cracker squares, chopped
- In a highpowered blender or food processor, process the banana, scraping down the sides of the blender every so often.
- It will take several minutes, but then will suddenly be smooth and creamy. Add the cream cheese and process until blended.
- Add the blueberries and graham crackers. Pulse until just combined.
- Serve immediately for soft serve, or freeze for a few hours until scoopable.
