Cheesy Potato Casserole

Last night I finished the final book in The Hunger Games Series, The Mockingjay. Oh and I stayed up until 1:30am in order to do so. As you can imagine my brain isn’t firing at 100% today which is probably good for anyone who hasn’t finished the books because otherwise I would jabber away about it. Instead, enjoy the cheesy goodness I am about to present to you.

The first time I had this potato dish was at a potluck at work. Emma brought it in and I immediately needed the recipe. It was so creamy, rich, and satisfying. But when I finally got around to making it on Sunday to go along with the ham, I decided to use Greek yogurt instead of sour cream. I love substituting sour cream, mayo and other similar ingredients with Greek yogurt! And no one else even noticed that it was a bit healthier :-).

CHEESY POTATO CASSEROLE

Makes 10-12 side servings

Ingredients:

POTATO MIXTURE

1 pkg. frozen hashbrowns (cubes), thawed

1 tsp salt

1/4 tsp pepper

1 can cream of chicken soup

2 cups shredded cheddar cheese

2 cups plain nonfat Greek yogurt

1/2 cup unsalted butter, melted

Minced onion to taste

TOPPING

2 cups crushed corn flakes

1/4 cup unsalted butter, melted

Directions:

  1. Preheat oven to 350 degrees. Grease a 9×13-inch baking pan, set aside.
  2. In a large bowl, combine the potato mixture together and pour into prepared pan. Combine topping and sprinkle over the potato mixture.
  3. Bake for 45 minutes or until bubbly and the topping is golden.

My roommate in grad school used to make this at least twice a month! Excellent adaptation of the recipe, the original seemed very Wisconsiny!

I also read all three hunger games books right in a row. Reading them on the kindle, I just flew through one and downloaded the next! :)

I read all three books too. I thought the ending of the third book was hurried. But I still loved them. And I LOVE cheesy potatoes!

I think I had something very similar at a work potluck too. Not something I would normally have but I am all for trying things at potlucks. It was wonderful! Greek yogurt is great for switching things to a healthier side. One time though I accidentally grabbed the vanilla instead of plain. Trust me, it is not a mistake you want to make.

I have had the second book of The Hunger Games at my house for months and haven’t started it because I know it will completely consume my life for however long it takes me to finish it!

Fantastic recipe! Funny, whenever I use Greek Yogurt and my Husband finds out he moans and groans and says it doesn’t taste great. I made muffins the other day and he loved them, and I mean loved them. Than 2 days later I told him I made it with yogurt and you should of seen his face, he was disappointed! lol I know he would LOVE your potato casserole! I’ll have to make it for him sometime this week, and not tell him there’s yogurt in it. he he

Haha how silly. Although I had something similar happen to me recently when I found out the food blobs in a bread were olives, not blueberries. Yea don’t ask… I’ll explain in a post eventually haha.

Those Hunger Games books are crazy addicting. I had a night similar to yours when I finished Mockingjay. Totally worth the lack of sleep!
These potatoes are awesome!! I also love subbing greek yogurt in recipes. What a great secret weapon!

This sounds and looks incredible!! I love the swapping of sour cream for greek yogurt, sounds fantastic! I’m yet to pick up the hunger games books or watch the movie. would you recommend it?!

SWOONx1001!!!!!! Don’t you just love the HG books? OMG I feel like a giant nerd admitting i’ve read and re-read them at least 3x each. I got into this awful habit of tearing through a book before bed and can’t put a decent one down to save my life — so those groggy mornings after a late night of reading until 1-4am? story of my life! ahhh I wish I could learn to use a damn bookmark ;)

I’ve read all the Hunger Games books, and my favorite was difintely Book #1, I was kind of disappointed with the trilogy ending. But this cheesy casserole is something that would definietly NOT disappoint me! Looks fabulous!

I love me some cheesy potatoes. They’re my favorite diner indulgence! (That’s a lie…I love everything on diner breakfast menus.)
