I hope everyone had a wonderful Christmas yesterday! I am always sad for it to be over, but thankfully New Years is only a week away so the excuse to eat excessively isn’t quite over. I prefer to not be judged when I had three full-sized slices of pie for dessert.
But today is Secret Recipe Club posting day. This month I got to pick a recipe from many delicious options by Kirstin at Loving Life. I actually really wanted to make her banana cream cheesecake, but with all the other desserts flying around I convinced myself to make something sweet for breakfast instead O:-). (But definitely need to make that cheesecake soon!)
This was my first experience with German pancakes – they kind of remind me of French toast, and I LOVE French toast! Will have to repeat these and test out different toppings, but was craving blueberries this time.
One year ago: Chocolate Gingerbread Sandwich Cookies
GERMAN PANCAKES
Serves 2-4
Ingredients:
2 Tbsp unsalted butter
6 eggs
1 cup milk
1 cup flour
2 Tbsp sugar
Pinch of salt
Pancake toppings (fruit, powdered sugar, syrup)
Directions:
- Preheat oven to 400. Drop about butter into a 9 x 13 pan. Place in oven to melt, then remove.
- Meanwhile, mix all ingredients together. Pour into pan with melted butter and back for 20-25 minutes.
- Remove from oven and serve with your favorite toppings.

I’ve seen recipes for these often and I think I might have to try it for breakfast in the morning! So much easier than flipping pancakes.
Id never seen German pancakes before (that I know of) but these look so cute (all rectangular and stuffs). I was thinking I need to mix up my breakfast rotation soon for the BF.
I was actually thinking of cooking these in individual pans next time so that I don’t have to cut them up from the bigger pan. But definitely a good change in the breakfast plan!
Looks yummy! I’m going to have to send along David’s family recipe to try….straight from Germany and only 3 ingredients….not including the applesauce and cinnamon sugar that goes on top :)

Ooooh, I have some blueberries in my freezer still from the summer. Sounds like a good topping choice to me. I actually used some to top your gingerbread pancakes too!

Ooh, I’ve never heard of German pancakes either–they do look yummy, though! I like the idea of baking them rather than doing them on a griddle. Yum!

Glad you liked them. My girls ask for them often! You NEED to try the Banana cream cheesecake….it is sooooo good! I just made it a few weeks ago for a christmas party.
