Last night I didn’t work out. Figured a break from the sweat sessions was deserved since I rarely miss a day no matter how little sleep I’ve had (which has been very little these days). It’s funny though, how I (try to) eat healthier on the days I work out, but it’s quite the contrary when I don’t. A break from the gym means eating a huge brownie covered in ice cream… right?

But I didn’t just want any fattening ice cream on top, I wanted the absolute king of fatty ice creams – Ben & Jerry’s! Clusterfluff ice cream to be exact (peanut butter ice cream, marshmallow fluff swirls, caramel cashew pieces, and more peanut butter swirled in). I didn’t think that any other ice cream would be good enough to put on top of this salivary-gland-exciting cookie brownie bar (second choice was cookies and cream for obvious reasons).

I added peanut butter Oreos instead of double-stuffed as in the original recipe, which ended up in a massively long name, but it deserves it. I also adjusted the cookie dough recipe to use my favorite chewy chocolate chip cookies instead. It was so gooey and rich, and I got to eat it warm out of the oven so it made the ice cream all melty. I think I gained weight before it even hit my lips. Oh good lord I want more. Please join me in this sugar/fat coma.

ULTIMATE CHOCOLATE CHIP COOKIE N' PEANUT BUTTER OREO FUDGE BROWNIE BAR

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 1 cup (2 sticks) butter, melted and cooled
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg + 1 egg yolk
  • 1 Tbsp vanilla extract
  • 2-1/4 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups (12 oz.) semisweet chocolate chips
  • 1 pkg peanut butter Oreos
  • 1 Family Size (9×13) Brownie mix (and ingredients listed on box)
  • 1/4 cup hot fudge topping (optional)

Directions

  1. Preheat oven to 350 degrees. Lightly coat a 9x13-inch pan with nonstick spray and set aside.
  2. In a large bowl, cream the butter and both sugars with an electric mixer on medium speed for 3-5 minutes, until light and fluffy. Add the eggs and vanilla and mix well to thoroughly combine.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Slowly incorporate into the mixer until the flour is just combined. Stir in chocolate chips.
  4. Spread the cookie dough in the bottom of the prepared baking dish. Top with a single layer of Oreos.
  5. In the same large bowl, mix together brownie mix and directed ingredients, adding an optional 1/4 cup of hot fudge topping to the mix. Pour the brownie batter over the cookie dough and Oreos. Bake for 40-50 minutes.

I was always the opposite – anytime I went to the gym I found a way to justify lots of sweets. I think your brownie would definitely do the trick :) I’ve never had the Clusterfluff ice cream but oh my word does it sound good. Need to find!

Haha, I am actually naturally less hungry on days I work out so I don’t even try to eat healthier, I do. On the days I don’t though – all hell breaks loose. This brownie is totally perfect for that kind of day! ;)

Oh. My.

I’m sorry, I think that I gained an inch on my hips just *looking* at that photo. Does that mean I don’t want to eat that whole thing right now? Heck no.

P.S. My boyfriend and I discovered Clusterfluff ice cream a few weeks ago and we are OBSESSED. It’s seriously the best of the B&J flavors I’ve ever had. Extra points.

OMG I KNOW! That ice cream is heaven. If I hadn’t read the nutritional info I would’ve eaten the entire thing in one sitting. Dividing it between two days is a much better strategy O:-).
