Brownie Covered Oreo Pops

Chocolate covered Oreos never disappoint. So when I saw the recipe for Brownie Covered Oreos at Picky Palate I assumed they would have the same result. Assumption correct! Just as she says the cookies are soft inside almost like little cakes. I actually prefer soft Oreos (usually meaning stale) and I don’t care if you think I’m weird! Also, I decided to cover the entire thing with chocolate, instead of just drizzling, and put it on a stick. Finished off by wrapping in plastic wrap and tying off with curled ribbon. Perfect for handing out during the holidays :-).

Ingredients:

1 Brownie mix (or use your own brownie recipe)

1 package Oreos (I used Winter Holiday red ones)

Popsicle sticks

White chocolate bark candy coating, melted over double boiler

Sprinkles

Directions:

  1. Preheat oven to 350 degrees.  Prepare brownie batter according to package directions.  Leave in mixing bowl.
  2. Dip Oreos in brownie batter then place in bottom of cupcake tins that have been generously sprayed with cooking spray.  Bake for 12-15 minutes, until brownies are cooked through.
  3. Let cool for 5 minutes. Take a plastic knife and run along the edges so you get the cookie out with brownies not stuck to pan.
  4. Line a baking sheet with wax paper.
  5. Insert popsicle sticks into the sides, about 1 inch, and dip into chocolate to fully coat. Set on prepared baking sheet, sprinkle and let set.

Have leftover brownie mix? I made mini muffin-brownies and dipped the tops into the chocolate!
