Blueberry-Almond Turtles

These dark chocolate blueberry-almond turtles are a delicious and lighter treat to enjoy when you crave something sweet. Or try a variation using different fruit and nut combos.

Sometimes you just need a little bit of dessert to complete the day. And the sooner it can be ready, the better. Last night I went a step further and prepared a “not-so-guilty-pleasure” dessert which I found in Women’s Health Magazine’s list of healthy dessert recipes.

Apparently these only contain 104 calories per turtle (additional nutritional information found on the link provided). I made 6 unintentionally, so I guess mine are even slimmer!

Blueberry-Almond Turtles

Time zero to craving-satisfaction occurred in five minutes. I think we can all handle that. Unfortunately the first time I made these I was unable to find the dried blueberries and was forced to use blueberry flavored dried cranberries. Probably not as nutritious, but still most definitely delicious!

I have made them again since and they are just as good with real blueberries too. Honestly you could make these with any dried fruit/nit combo you prefer.

Healthy Blueberry-Almond Turtles

BLUEBERRY-ALMOND TURTLES

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 7 Tbsp (2.5 oz) good quality dark chocolate chips
  • 1/4 cup dried blueberries*
  • 1/4 sliced or slivered almonds*

Directions

  1. Line a plate or tray with wax or parchment paper.
  2. In a medium glass bowl, microwave chocolate for 60 seconds, stirring every 15 seconds, until completely melted**.
  3. Stir in blueberries and nuts, then drop 5-6 rounded tablespoons onto wax/parchment paper.
  4. Chill in refrigerator for 2-4 minutes or until set.

Notes

* Try other favorite fruits and nuts. ** If there are a few lumps, just keep stirring until melted instead of heating further.
